Overview
An electric fillet knife is a handheld power tool that cleanly separates fish flesh from bone using reciprocating dual blades. Electric fillet knives perform best with long, smooth strokes following the fish's natural body contours. The angler should guide the blade along the ribcage, using the spine as a reference. The oscillating blades naturally track bone and follow curves, requiring less manual correction than a fixed knife. For delicate work (removing skin), lower speeds (30–50%) provide better control. For heavy cutting (through cartilage and bone), full speed minimizes resistance and reduces hand strain.
A typical fish weighing 2–4 pounds is filleted in 2–3 minutes using an electric knife, compared to 5–8 minutes with a manual knife. For commercial fishing operations or large-scale processing, the speed and consistency gains justify the cost of batteries and charging infrastructure.
