An electric griddle is a flat plug-in cooking surface sized for breakfast foods: pancakes, eggs, bacon, French toast, and grilled sandwiches. It does one thing a stovetop pan does not, which is hold a single large area at one steady temperature so that a whole batch cooks at the same rate. There is no flame and no burner hot spot; heat comes from an element built into the plate itself and is held in check by a thermostat the user sets with a dial.
The appliance is built from a heated Cooking Plate, the Heater System cast into its underside, a Base Housing that keeps the heat away from the counter, a detachable Temperature Control that regulates the surface, and a Grease Management that drains off rendered fat. It is one of the simpler kitchen appliances, with no pump, motor, or microcontroller, yet the way it spreads and holds heat is what separates a good griddle from a pan on a hotplate.
The cooking plate
The heart of the griddle is the Plate Body, a thick slab of cast aluminium. Aluminium is chosen because it conducts heat quickly and evenly, so the energy from a single element line spreads across the whole surface rather than leaving cold corners. The plate is deliberately heavy: thermal mass is what lets it shrug off the cooling that happens when cold batter hits it, so the second pancake cooks like the first. Its top wears a Non-Stick Coating of PTFE that releases eggs and pancakes with little or no oil and makes the plate easy to wipe. The underside carries the Element Channel, a groove cast into the metal that holds the heating element in tight contact. The front of the plate slopes to a Pour-Off Edge so that fat runs forward instead of pooling, and low Splash Walls keep splatter contained.
How it heats
Heat is produced by a single Heating Element, a tubular element with a resistance wire running through compacted magnesium oxide inside a metal sheath. Pressed into the plate channel and held by Element Clamps, it transfers its heat into the aluminium by conduction. Its ends land on a ceramic Terminal Block that survives the plate temperature, and High-Temp Wire insulated with mica and fibreglass carries power to it because ordinary PVC wire would melt at these temperatures. A Thermal Fuse sits in the circuit as a one-shot backstop that cuts power for good if the plate ever runs away past its safe limit.
Temperature control
The griddle holds its setting with the Temperature Control, a probe thermostat that plugs into the body and can be pulled off entirely for washing. Inside the probe a Probe Thermostat uses a bimetal element that bends as it heats; when the plate reaches the temperature picked on the Control Dial, the bimetal snaps open and breaks the circuit, then closes again as the plate cools. This on-off cycling is what keeps the surface hovering near the set point. Power reaches the griddle only through the Probe Power Pins, a safety feature that means a wet plate cannot be plugged in until the probe is fitted and the plate is dry, since the probe is the only path for mains into the appliance. A Ready Indicator Light on the probe glows while the element is on and signals when the plate is up to temperature.
Grease and the counter
Breakfast cooking renders a lot of fat, so the Grease Management gives it somewhere to go. The sloped plate front feeds a Drain Hole that empties into the Grease Channel and finally a slide-out Drip Tray that the user empties after cooking. Underneath, the Heat Shield of aluminised steel reflects heat back up and away from the worktop, and the Insulating Feet hold the body off the surface on an insulating standoff so the counter stays cool. Cool-touch Cool-Touch Handles at both ends let the hot griddle be carried to the sink.
Use, cleaning, and variants
In use the griddle is set with the dial, preheated until the ready light shows, and cooked on directly. Its big advantage over a frying pan is the steady, large, even surface, which is why it is favoured for cooking many pancakes or eggs at once. Because the probe and cord detach and the plate has no electrical parts of its own, the plate can be immersed and washed, unlike most powered appliances. Variants differ mainly in surface size, whether the plate is reversible with a ribbed grill side, and whether the body is a fixed unit or a plate that lifts out of the housing. The cast-aluminium plate, cast-in element, and detachable probe thermostat are common across the category.
