Outdoor Gas Pizza Oven

An outdoor gas pizza oven burns propane to drive a stone deck past 450 degrees C so a Neapolitan-style pizza cooks in 60 to 120 seconds, far faster than any indoor electric oven limited by a wall socket. Gas removes the socket ceiling: a Burner Tube can deliver 5 to 9 kW of heat, enough to keep a Cordierite Baking Stone hot through back-to-back bakes and to roll a flame across the dome for the leoparded, blistered crust that defines the style. The trade is that it must run outdoors, vented through a Chimney Assembly, with a regulated gas supply and flame-safety hardware that an electric oven does not need. The machine is built around three jobs: contain heat in the Oven Body, deliver and control gas safely through the Gas Train, and store base heat in the deck.
Oven body and heat path
The Oven Body is a double-wall steel dome. A stainless Inner Dome forms the cooking chamber, a Outer Shell forms the skin, and between them sits a Ceramic Fiber Insulation blanket of ceramic fiber that keeps the outside touchable and the inside hot. A rear burner alone would scorch the back of a pizza and leave the front raw, so a Flame Baffle deflects the flame up and forward, making it lick along the curved dome and radiate back down across the whole pie. This rolling flame, not the burner pointing at the food, is what browns the rim evenly. The dome shape is functional: it returns radiant heat to the deck and keeps a hot gas layer over the toppings, the same physics as a wood-fired brick oven reduced to a portable steel shell.
Burner and combustion
The Burner System centers on a perforated Burner Tube held by two Burner Bracket mounts along the rear or one side of the deck. Gas leaves the Burner Orifice jet as a fast stream that draws in primary air through the Air Shutter before it reaches the burner ports, the same venturi mixing used in any atmospheric gas burner. The shutter is set so the flame burns blue and clean; too little air gives sooty yellow tips that mark the stone and food, too much lifts the flame off the ports. A Flame Shield protects the burner from drips and keeps the flame stable in wind, which matters because this is an outdoor appliance exposed to gusts that can blow a flame out.
Gas train and safety
Propane leaves the cylinder at a high and variable pressure, so the Propane Regulator steps it down to the fixed appliance pressure, around 37 mbar, before it travels through the Gas Hose to the oven. The user sets flame size with the Gas Control Valve, a needle valve that throttles flow to the burner. The critical safety part is the Flame Thermocouple, a flame sensor whose tip sits in the burner flame. While it stays hot it generates a small voltage that holds an internal safety valve open; if the flame goes out, the thermocouple cools within seconds and the valve snaps shut, cutting gas before it can pool. This is why lighting requires holding the knob in for a few seconds, to heat the thermocouple before the safety circuit takes over. Ignition is by the Ignition System system: pressing the Ignition Button strikes a Piezoelectric Element that fires a spark across the Spark Electrode through the Ignition Wire, with no battery needed.
Stone deck and oven mouth
The Stone Deck Assembly is the floor the pizza sits on: split Cordierite Baking Stone cordierite slabs on a Stone Support Frame frame. Cordierite is chosen for thermal shock resistance, so a 60 percent hydrated dough can land on a 450 degree stone without cracking it, and the stone dumps stored heat into the base far faster than air could. The Oven Mouth is the front opening, framed by the Mouth Frame with a Carry Handle for moving the oven and an optional insulated Front Door that holds heat during long preheats or when roasting. Most cooking is done with the mouth open so the pizza can be launched, turned with a peel, and pulled in under two minutes.
Chimney, stand and use
Combustion produces hot exhaust and water vapor that must leave, and the draft they create pulls fresh air through the burner, so the Chimney Assembly is part of the burn, not just a vent. Its Flue Tube carries gases out, a Flue Damper trims draft to balance heat retention against airflow, and a Rain Cap keeps weather out. The oven stands on a Leg Set of four Folding Leg folding legs on Leg Hinge joints and Rubber Foot pads, so it sits on a bench or table and folds flat for transport. In use it is preheated 15 to 25 minutes until the stone reads 400 degrees or more, then pizzas are baked one at a time and turned once or twice because the rear runs hottest. Natural-gas variants swap the regulator and orifice for the lower gas pressure of a mains connection, and larger models add a second burner or a built-in stand, but the heat path through dome, baffle and stone is the same.
