Overview

A multi-function rice cooker does much more than its name suggests. At its core it cooks rice perfectly without supervision, but the same heated pot and programmable controller also make porridge, steam vegetables, slow-cook stews, and hold food warm for hours. The appliance succeeds because it senses what is happening inside the pot and changes its behaviour automatically: it knows when the rice has absorbed all its water and switches to keeping warm without the user ever setting a timer.

The product is built around the removable Inner Cooking Pot that holds the food, the Heating System under it that supplies and senses heat, the Body Assembly that houses everything, the sealing Lid Assembly, and the Control Board that runs the cooking programs. A set of Steam Accessories extends it to steaming. The clever part is the sensing, which is how a simple plate heater can cook many different foods correctly.

The inner pot

Food cooks in the Pot Body, a thick aluminium pot chosen for the way it spreads heat from the plate evenly across its base and walls, so rice on the outside cooks at the same rate as rice in the middle. Its inside wears a Non-Stick Coating of PTFE so cooked rice lifts out cleanly and the pot wipes down without scrubbing. The Water Level Scale etched on the inside set the ratio of water to rice, which is the single most important variable in rice cooking: too little and the rice is hard, too much and it turns to mush. The pot lifts out by its Pot Handles for filling, serving, and washing.

How it knows the rice is done

The oldest and most elegant trick in a rice cooker is the Magnetic Thermostat. While there is free water in the pot, boiling holds the temperature at 100 C no matter how much heat the plate supplies, because the energy goes into turning water to steam rather than raising the temperature. Only when the last water is absorbed or boiled off can the pot bottom climb above 100 C. A magnet in the thermostat is tuned to lose its magnetism at that Curie point, so it lets go and trips the cooker out of the cook cycle at exactly the right moment. Modern multi-cookers add a Center Thermistor in the plate and a Lid Thermistor in the lid, two thermistors that feed the controller a fuller picture of pot and steam temperature so it can run smarter fuzzy-logic programs for brown rice, porridge, and other foods that the simple magnet cannot judge.

Heating and the body

Heat comes from a Heating Element cast into the Heating Plate that the pot rests on. A Coil Spring presses the plate up against the pot bottom so the two stay in firm thermal contact even as they expand, and a Thermal Fuse guards against the plate overheating if the pot is ever run dry. The Body Assembly wraps the pot in a stainless Inner Heat Liner that reflects heat back toward the food, surrounded by the plastic Outer Shell. Power enters through a Magnetic Cord Inlet, a magnetic breakaway connector that releases harmlessly if someone trips on the cord, a safety feature given that the appliance is full of near-boiling food.

Lid, steam, and sealing

The Lid Assembly seals the pot so steam builds inside and the rice cooks in its own moisture. A silicone Lid Gasket makes the seal, and a removable stainless Inner Cover Plate takes the brunt of the splatter and lifts out to wash, so the lid itself stays clean. A Steam Valve vents excess steam and limits the pressure that builds during cooking, while a Condensate Cup catches the water that drips off the lid when it is opened so it does not run down the outside of the body. For steaming, the Steam Basket holds vegetables above a little water in the pot, letting the same appliance steam and cook rice together.

Control, programs, and use

The Control Board carries an Microcontroller that reads the two thermistors and runs the cooking programs, switching the heater through a Triac for fine power control and a Relay for the keep-warm stage. The Display & Keypad lets the user pick rice type, porridge, steam, or slow-cook, and set a delay start so rice is ready at a chosen time. To use it, rice and water are measured to the marks, the program is selected, and the cooker handles the rest, dropping to keep-warm automatically when cooking ends. Maintenance is washing the pot, inner cover, and gasket and emptying the condensate cup. Variants differ in capacity, whether they add pressure cooking, and the number of preset programs, but the removable non-stick pot, plate heater, magnetic done-detection, and sealing lid are common across the category.
