Overview

An electric skillet is a self-heating frying pan that works anywhere there is an outlet, freeing the cook from the stovetop. Its defining feature is that the heat source is built into the pan rather than supplied from below: the Pan Body is a cast-aluminium frying pan with a tubular element cast into its underside, so the whole base heats evenly instead of relying on a burner's hot ring. Cooking temperature is set on the Temperature-Probe Control, a removable control that plugs into the side of the pan. A Vented Lid traps heat and steam, two Side Handle grips carry the hot pan, and four Heat-Resistant Foot supports lift it off the counter.

How it works

The element cast into the pan is wired in series with a Bimetal Thermostat inside the detachable control and with a one-shot thermal fuse in the pan. The thermostat's bimetal strip senses the pan's temperature through the probe pins; as the metal heats past the setpoint chosen on the Temperature Dial it snaps open to cut the element, then closes again as the pan cools, cycling the surface around the target. The Indicator Light neon lights while the element draws current, so a dark lamp signals the pan is up to heat.

The control is detachable for a practical reason: unplugging it at the Probe Socket turns the pan into an ordinary cast vessel with no live wiring, so it can be fully immersed and washed. The pins of the Probe Pins carry mains current into the element and also place the bimetal sensor in thermal contact with the pan. Over the cooking surface, the Vented Lid retains heat for braising and simmering, while its steam vent bleeds off moisture so condensation does not drip back and make a fried surface soggy. If a stuck thermostat ever let the pan run away, the thermal fuse opens permanently and takes the appliance out of service rather than letting the nonstick coating scorch.
