Overview

A chocolate fondue fountain is a countertop appliance that holds melted chocolate at flow temperature and recirculates it so it falls in continuous sheets over a stack of tiers. Guests dip fruit, marshmallows, or biscuits into the moving curtains. The appliance has two jobs running at once: it heats a pool of chocolate enough to keep it liquid, and it lifts that chocolate from the pool to the top so gravity can return it. Heating is handled by the Heating System under the Basin Assembly, and lifting is handled by the Auger Turret turned by the Drive System. The chocolate then falls down the Tiered Tower back into the basin, and the cycle repeats for as long as the unit runs.

This model holds about 2.5 kg of chocolate in a 304 stainless basin, uses a 250 W ring heater, and runs a 4 W synchronous motor that spins the auger near 30 rpm. It stands 500 mm tall over three tiers and a crown, and it runs on 230 V, 50 Hz mains through the Power Cord.

Basin and heating

The Heating Element is a ring element clamped against that aluminium plate so heat spreads across the whole floor rather than concentrating at one point, which keeps the chocolate from scorching where it sits longest. A Basin Temperature Sensor reads the floor temperature and feeds the Adjustable Thermostat, which holds a warm setting around 40–45 °C for serving and a higher melt setting around 50–55 °C for the initial melt. If control fails and the plate overheats, a Thermal Fuse opens the circuit permanently. A Heater Insulation Blanket blanket keeps that heat in the basin instead of the base, and a Basin Seal Gasket seals the joint where the tower meets the bowl. Chocolate has to be thinned with a little vegetable oil before use, because plain couverture is too thick to climb the auger and break into clean curtains.

Auger turret and drive

The lift mechanism is the heart of the appliance. The Auger Screw is a helical flighted screw running inside the Auger Tube at the center of the basin. Pooled chocolate enters at the Auger Inlet Ring near the bottom, and as the screw turns its flights carry the chocolate upward along the tube. At the foot the screw is steadied by a sintered bronze Lower Auger Bush, and at the top the Auger Drive Shaft runs in a Ball Bearing with an Oil Seal below it to keep chocolate out of the drive. Turning the screw is the Drive Motor, an AC synchronous motor built from a Stator Assembly and a Rotor Assembly in a Motor Housing. Its output passes through the Reduction Gearbox, a single-stage reduction using a Helical Gear Pair in a Gearbox Housing, which drops the speed to about 30 rpm so the chocolate climbs steadily without splashing. A Motor Run Capacitor sets the motor running, and the Auger Coupling links the gearbox output to the screw shaft.

Tower and cascade

Chocolate leaving the top of the auger floods the Crown Cap, a domed piece that overflows evenly in every direction onto the first of three Cascade Tier Discs. Each tier is a stainless disc with a turned-down edge, so chocolate gathering on it spills over the rim as a thin sheet and falls to the tier below. The tiers stack around the hollow Center Column on Tier Spacers, and the whole stack is clamped to the basin with the Column Lock Nut. Even spacing and a level stand matter here: if a tier tilts, the curtain breaks into a stream on one side and runs dry on the other, which is why the unit sits on three adjustable Leveling Foot.

Base and control

The Base Housing carries the drive, the heater wiring, and the controls. A Mode Selector Switch selects off, warm, or run, and an Indicator Lamp shows when power is on. The Control Board switches heater and motor power through its Relays, and the Wiring Harness ties the heater, motor, sensor, and switch together. The Power Cord enters through a Cord Strain Relief on the rear of the base.

Materials and use

Every surface the chocolate touches is 304 stainless steel or food-grade silicone, so the basin, auger, column, and tiers can be washed and re-used. The base is shielded from heat by the insulation blanket and a Sheet Metal Panel bottom plate. In service the operator melts chocolate separately, thins it with oil, fills the warm basin, and switches to run only once the chocolate is fully liquid, since starting the auger against stiff chocolate stalls the motor. After service the tower lifts off for cleaning and the basin wipes out while still warm, before any residue sets hard.
