Electric Carving Knife Product
Overview
An electric carving knife slices roasts, poultry and bread with a pair of serrated blades that saw past each other instead of one blade pressed through by hand. The cook grips the Handle Housing, seats the Twin Blade Set into the nose, and squeezes the trigger; the blades reciprocate in opposite directions, so the cutting action does the work and the knife glides through with little downward force. Because the two blades move against each other, the meat is held steady between them and slices come out even.
The blades clip out for washing, and a Blade Release latch ejects them at the press of a button so the cook never has to pull on a powered edge.
How it works
Squeezing the Trigger Switch closes the Trigger Microswitch and runs the Drive Motor, a compact universal motor that spins fast but cannot drive blades back and forth on its own. Its output passes through the Eccentric Drive, where a Helical Gear Pair first steps the speed down to a usable stroke rate.
The reduced shaft turns the Eccentric Cam, an off-center cam that converts rotation into a short linear push. Two Blade Driver Lug lugs ride the cam a half-turn apart, so as one blade is driven forward the other is pulled back — the counter-reciprocating motion that makes the knife self-feeding. The lugs engage the tangs of the two Serrated Blade members, which slide inside the Blade Carriage along guide rails that keep their serrations meshed. Releasing the trigger cuts power; pressing the Release Button frees the blade latch and a spring pops the blades clear. Mains power reaches the motor through the strain-relieved Power Cord.
