Home Meat Slicer

Overview

A home meat slicer cuts even slices by feeding food across a spinning circular blade rather than by pressing a knife down through it. The food rides on a sliding tray that the operator pushes back and forth past the blade, and a movable plate beside the blade sets how thick each slice comes off. Because the blade turns at a steady low speed and the food moves at hand pace, the machine makes slices that are far more even than hand cutting, which is why it is used for deli meats, hard and semi-hard cheese, bread, and firm vegetables. The trade-off is that the exposed blade is dangerous, so much of the design goes into guarding it and into stopping the motor when the machine is opened.

The product is built around a few large groups. The Motor and Drive turns the blade, the Blade Assembly does the cutting, the Food Carriage feeds the food, the Thickness Adjuster sets the slice, the Food Pusher keeps the hand clear, the Blade Guard and Switch and Interlock handle safety, the Sharpening Attachment keeps the edge keen, and the Base and Housing holds everything on the counter.

Motor and drive

The blade does not spin fast. A meat slicer cuts best at a few hundred rpm, where the edge shears cleanly without tearing or heating the food, so the Motor and Drive uses a quiet Induction Motor of the single-phase induction type. Inside that motor a wound Stator Assembly drives a squirrel-cage Rotor Assembly on the Motor Shaft, with a Run Capacitor to start and run it on household power. A small Motor Pulley sends a Drive Belt to a larger Blade Pulley, which steps the speed down to the blade. That pulley turns the Blade Shaft, carried on two Ball Bearing units, and a Thermal Cutout protects the windings if the machine is run too long. Power reaches the motor through the Cord Set.

Blade and guard

The Circular Blade is a hardened stainless disc with a hollow-ground edge, mounted on the Blade Hub and held by a single Blade Bolt so it can be removed flat for cleaning. An Oil Seal keeps food and wash water out of the bearing behind the hub. As the blade turns, the Slice Deflector peels each finished slice off the steel so it falls away cleanly instead of sticking. Around the blade sits the Blade Guard, a fixed Guard Ring that covers the upper rim during use and a removable Blade Cover held by the Cover Knob that lets the user reach the back face for cleaning. The blade is the sharpest hazard on the machine, so the guard is sized to leave only the working part of the edge exposed.

Feeding the food

The food rides on the Food Carriage. Its Carriage Tray is tilted toward the blade and slides on a Linear Guide Rail so it tracks straight on every stroke. The operator works it with the Carriage Handle, a Travel Stop limits travel at each end, and a Coil Spring helps return the tray. Holding the food is the Food Pusher: a Pusher Plate presses the food flat, Gripping Prongs bite into the end so the last of a piece still feeds evenly, and the Pusher Arm and Hand Grip keep the hand a safe distance from the edge. The slice thickness comes from the Thickness Adjuster group, where the Thickness Knob turns a Thickness Cam that shifts the Gauge Plate toward or away from the blade, from a closed zero up to about fifteen millimetres.

Safety and sharpening

The slicer will not run unless it is set up correctly. The Switch and Interlock group ties the On/Off Switch to a Carriage Interlock that cuts the motor through a Relay when the carriage or pusher is removed, wired with a Wire Bundle and Connector set. To keep the edge cutting cleanly the machine carries its own Sharpening Attachment. A coarse Grinding Stone sets the bevel and a fine Honing Stone removes the burr, both held at the right angle in the Sharpener Body and pushed against the spinning blade by the Engage Knob when the user turns it.

Base and use

Everything mounts on the Base and Housing, whose Base Casting carries the motor, blade, and rail, covered by the Body Shell. Four Non-Slip Foot pads keep the machine planted while the carriage moves, and a Sheet Metal Panel drip tray catches juice for easy cleaning. A home meat slicer earns its place by turning a chore that is slow and uneven by hand into a fast and repeatable one, and the same design at larger scale and heavier duty is what a deli counter runs all day.
