A sous vide immersion circulator is a wand that hangs over the rim of a pot and turns it into a controlled water bath. The user sets a target temperature, drops in vacuum-sealed food, and the device holds the water within a fraction of a degree for hours. The whole appliance is built around two jobs that run together: a Heating Subsystem adds heat, and a Circulation Subsystem keeps the water moving so the heat spreads evenly. Everything else on the wand exists to support, seal, sense, or control those two functions.
The wand splits into a wet end and a dry end. Below the waterline sits the Stainless Skirt Assembly, a removable stainless tube that shrouds the heater and pump. Above it the Body Housing holds the electronics, the User Interface Assembly, and the Pot Clamp Assembly that grips the pot. A Sealing Bulkhead separates the two ends so splashing water never reaches the boards.
How it works
Heat comes from the Heating Element, a resistive coil rated near 1000 W. The coil is wound onto a Heater Core Mandrel, a magnesium-oxide-packed mandrel that insulates it electrically while still passing heat outward into the Heater Sheath. The sheath is a welded 304 stainless tube, so the live coil never touches the water. Around the heater, the pump pulls water in through the Intake Skirt at the bottom, pushes it across the hot sheath, and throws it back out through the Directional Outlet Cap. That forced flow is what gives the bath a uniform temperature instead of a hot zone near the element.
Temperature control is a closed loop. A platinum RTD Temperature Probe reads the water continuously and feeds the Main Control Board. The board runs a PID routine on its Microcontroller and adjusts heater power through a Heater Triac that phase-controls the element in small steps rather than switching it fully on and off. Near the setpoint the heater may run at only a few percent of full power, which is how the wand holds ±0.1 °C. A separate Bath Thermistor in the Sensor Set gives a second, independent reading the firmware checks against the RTD, so a single failed sensor cannot drive the bath to the wrong temperature.
Heating and safety
Running a 1000 W element in water means the dry-fire case has to be handled directly. If the water drops below the fill line, the Water-Level Sensor cuts the heater before the sheath can overheat. Behind that electronic guard sits a Thermal Cutoff Fuse, a one-shot fuse bonded to the heater that opens permanently near 105 °C if the firmware ever loses control. The RTD signal is cleaned up by the RTD Front-End Board before it reaches the microcontroller, because a noisy reading near the setpoint would make the loop hunt and overshoot. The element, sheath, and cutoff are carried together on a Heater Mounting Bracket inside the skirt.
Circulation
Flow comes from a small brushless motor. The Pump Motor (BLDC) uses a permanent-magnet Motor Rotor turning inside a wound Motor Stator, with a Hall Sensor reporting rotor position so the BLDC Motor Driver IC can commutate it. The motor turns a Pump Shaft that drives the Centrifugal Impeller, a glass-filled nylon wheel sized for about 8 L/min inside the Impeller Housing (Volute). The shaft rides on a pair of Ball Bearing units and passes through a Shaft Lip Seal that keeps water in the wet pump end and out of the dry motor. Because the motor is brushless and sealed, it runs for the long hold times sous vide cooking needs without wear from a commutator.
Skirt and cleaning
The Skirt Tube is the part that lives in the food bath, so it is drawn 304 stainless and comes off for cleaning. A Skirt Bayonet Collar locks it to the body with a quarter turn, sealed by an O-Ring Set. A Flow Screen at the inlet keeps loose food and herbs out of the impeller, and a Min/Max Fill Band marks the safe water range on the tube so the user fills the pot correctly.
Control, interface, and power
The user dials temperature and time on a Capacitive Touch Wheel, a ring of capacitive pads read by the UI Driver Board. The setpoint, current temperature, and remaining time show on the LCD Panel behind a Display Lens Window. A Wi-Fi Module on the control board lets a phone app start a cook and send an alert when the bath reaches temperature. Mains power enters through the Power Module, where a Power Cord & Plug anchored by a Cord Strain Relief feeds a Mains Filter Board and a low-voltage Power Supply for the boards. The wand stays put because the Pot Clamp Assembly grips the pot wall: a Clamp Thumbscrew drives the Sliding Clamp Jaw against a fixed jaw, with a Coil Spring returning the slider and silicone pads protecting the cookware.
Use and variants
Typical home cooks run the bath between 50 and 65 °C for proteins and up to about 85 °C for vegetables and eggs, well inside the 0–95 °C range. Hold times run from under an hour for a steak to a full day for tough cuts, which is why low standby heat draw and a quiet pump matter more than raw wattage. Higher-end models add the Wi-Fi link and a wider clamp range; entry models drop the app and use a simpler dial. Across the range the heater, RTD, pump, and stainless skirt are the same core, so most of the cost and most of the engineering sit in the wet end rather than the electronics.
