Overview

A gas range is a freestanding cooker that combines gas surface burners on top with a gas oven below, in one self-supporting cabinet that slides between or beside kitchen cabinets. It is the most common all-gas cooking appliance because a single gas line and a 120 V outlet power both the cooktop and the oven, and the flame gives the instant, visible heat control that many cooks prefer. Unlike a wall oven plus separate cooktop, everything is integrated into a 30 inch wide body with a storage drawer at the bottom and the controls on a rear backguard or the front.

The range is built from a Cooktop Burner System of surface burners, a Oven Cavity heated by the Bake and Broil Burner System burners, a Gas Manifold and Valves feeding all of them, a Ignition and Flame Safety system with flame safety, the Control System, a Oven Door Assembly, and the Cabinet and Backguard that ties it together.

Cooktop burners

The top carries four or five sealed surface burners. Each has a cast Surface Burner Base where gas from the Surface Burner Orifice entrains primary air, and a brass Surface Burner Cap that shapes the ring of flame. A Burner Seal keeps spills on top of the Cooktop Panel, and continuous cast-iron grates, each a Cast-Iron Grate, let pots slide across the surface. Burner outputs are graded so the cook has a high-output burner for boiling and a low-output burner for simmering, set by orifice size and the regulated manifold pressure.

Oven and bake-broil burners

Below the cooktop is the Oven Cavity, a Oven Cavity Liner of porcelain-enameled steel wrapped in a Cavity Insulation blanket. Cookware sits on a Oven Rack in a Rack Guide, lit by the Oven Light. Heat comes from the Bake Burner, a U-shaped tube hidden under the oven floor behind a Burner Heat Shield that spreads the flame's heat evenly, and from the Broil Burner at the cavity roof for top-down broiling. Each is fed through a Oven Burner Orifice. Combustion gases from the oven leave through a Flue Baffle to a vent, since a gas oven, unlike an electric one, produces exhaust that must be carried away. A Convection Fan is added on convection models to circulate the heated air.

Gas train

Gas enters at the Gas Inlet Fitting and passes the Pressure Regulator, which holds a steady manifold pressure regardless of supply swings. The Gas Manifold Tube then feeds a Surface Burner Valve for each surface burner and a Oven Gas Valve for the oven. The oven valve is thermostatic or electronic, cycling the bake and broil burners to hold the set temperature. An O-Ring Set seals the valve stems and joints so no gas escapes inside the body.

Ignition and flame safety

The cooktop and the oven light differently. Surface burners use the Spark Ignition Module firing a Spark Electrode at each burner, with a Flame Sensor confirming the flame and a Flame-Failure Valve that cuts the gas if a surface flame goes out. The oven uses a Glow-Bar Igniter, a silicon-carbide bar that heats until it glows; current through the hot bar both opens the oven gas valve and ignites the gas, so if the bar fails to glow the valve never opens. The Ignition Harness carries the high-voltage spark and the igniter current.

Controls

The Control System mixes mechanical and electronic control. Each surface burner and the oven has a Control Knob, while the oven temperature, clock, and timer run through the Oven Controller and its Microcontroller, shown on the Display and Keypad. A Oven Temperature Sensor reports cavity temperature so the controller can cycle the oven valve and the Relay devices that switch the glow igniter and the convection fan. A Wire Bundle ties the controls to the burners and sensors.

Door, cabinet, and safety

The Oven Door Assembly has a tempered Door Window Glass window, an insulated Door Inner Panel, a Door Hinge on each side, a Door Gasket of fiberglass rope, and a full-width Door Handle. The freestanding body is built from formed Sheet Metal Panel sides and rear, with a Storage Drawer at the bottom, a Control Backguard carrying the controls, and a Leveling Leg at each corner. Code requires a Anti-Tip Bracket anchoring the range so it cannot tip forward when weight is placed on an open door, and a Fastener Set holds the assembly together.

Variants and use

Gas ranges come in 30 inch standard widths and 36 or 48 inch professional sizes with five or six burners and larger ovens. Options include convection baking, a dual-fuel pairing that swaps the gas oven for an electric one, sealed versus open burners, and propane conversion using smaller orifices and a different regulator spring. The all-gas range remains the default choice where a gas line is present and the cook values responsive flame control across both the cooktop and the oven.
