Kimchi Refrigerator

Product

Overview

A kimchi refrigerator is a Korean specialty appliance designed to store and ferment kimchi, doenjang (soybean paste), and other fermented vegetables under optimal conditions. Unlike a standard refrigerator that keeps everything cold, a kimchi fridge has separate Storage Compartments with independent temperature zones controlled by a Multi-Zone Control: a fermentation zone at 16–20 °C where kimchi slowly develops flavor and beneficial bacteria, and a storage zone at 2–5 °C where finished kimchi is preserved at peak quality.

The design reflects Korean culinary knowledge accumulated over centuries: fermentation requires warmth to activate lactobacillus and yeasts, but once complete, the product must stay cold to slow spoilage. A single appliance with dual zones eliminates the compromise between active fermentation (which wants room temperature) and storage (which wants cold).

How it works

The operator sets desired temperatures for fermentation and storage zones using the Control Panel. The Control PCB Microcontroller reads both the Main Zone Sensor (storage zone) and Fermentation Zone Sensor (fermentation zone) via thermistors.

When either zone temperature exceeds its setpoint, the Relay energizes the Rotary Compressor. The compressor circulates refrigerant through two evaporators: the Main Refrigerator Evaporator cools the storage zone to 2–5 °C, while the Fermentation Evaporator cools the fermentation zone more gently to 16–20 °C. The Expansion Valve throttles refrigerant flow, allowing independent temperature control via Damper Shutter solenoid shutters that modulate airflow from the Circulation Fan.

When fermentation mode is active, the fermentation Fermentation Drawer stays at 16–20 °C, cool enough to slow fermentation if needed, but warm enough to keep lactobacillus activity mild. The operator places freshly made kimchi in this drawer. Over days to weeks, beneficial bacteria in the kimchi (or natural fermentation starters) generate lactic acid, creating the characteristic tangy flavor and firm texture.

When fermentation reaches desired flavor intensity, the operator transfers kimchi to the Storage Shelf in the cold storage zone, where 2–5 °C nearly stops bacterial activity, preserving the product for months.

The Refrigerator Cabinet is heavily insulated with 50–100 mm of Polyurethane Insulation polyurethane foam, reducing compressor cycling and electricity use. The Upper Refrigerator Door and Lower Fermentation Door are independent, so opening the storage compartment does not affect the fermentation zone temperature, which is critical during fermentation.

The Crisper Drawer in some models offers a third zone, humidity-controlled but not separately chilled, for fresh vegetables awaiting fermentation prep.

Many models include deodorization features: activated charcoal filters and UV light in ventilation passages reduce odors that fermentation naturally produces, preventing the distinctive funky smell from permeating the kitchen. This is less about removing beneficial compounds and more about controlling ambient household odor.

The Electrical System power cord supplies 230 V to the Electrical Enclosure enclosure, which houses the Relay switching the compressor on and off based on the controller logic. Average power consumption is 500–1000 W, similar to a standard refrigerator, though fermentation mode uses slightly less because the fermentation zone compressor duty cycle is lighter.

This specialized appliance is ubiquitous in Korean households and increasingly common in Asian communities worldwide. It solves the fermentation paradox: you cannot ferment properly in a standard cold refrigerator, but leaving fermented food at room temperature spoils it quickly. A dual-zone fridge lets the home cook maintain a living fermentation process while safely storing finished product.
