Overview

A food truck is a self-contained commercial kitchen built into a road vehicle, most often a forward-control aluminum step van of about 6,300 kg GVWR. It must satisfy two regulatory regimes at once: motor vehicle law for the chassis and the local health code — usually derived from the FDA Food Code — for everything behind the driver's seat. The result is a tightly packed plant: roughly 80 kW of propane-fired cooking, a ventilation hood with fire suppression, an electrical system with its own generator, and a plumbed water system, all in a kitchen box of 4.3 to 7.9 m.

Chassis and shell

The Truck Chassis is a conventional ladder-frame step van: Ladder Frame carrying a Diesel Engine of about 150 kW through a 6-speed Automatic Transmission, with sliding Sliding Cab Door entries on the Driver Cab. The frame must carry around 2,000 kg of installed equipment plus tank loads, which is why builds start from commercial chassis rather than passenger vans.

Inside, the Kitchen Build-Out Structure converts the cargo box into inspectable kitchen space. Health codes require smooth, washable, non-absorbent surfaces, so every wall and ceiling gets an aluminum or FRP Wall and Ceiling Liner, the floor a sealed non-slip Floor System with coved edges, and the walls behind cooking equipment stainless Sheet Metal Panel backsplash. Stainless Work Counter runs and latched Storage Rack shelving complete the line; everything must be restrained because the kitchen experiences crash and braking loads a building never sees.

Cooking line and ventilation

The Cooking Line runs along the curb-side wall: a 36-inch Flat-Top Griddle whose 19 mm Griddle Plate is heated by three atmospheric Atmospheric Burner castings, a Deep Fryer holding 18 kg of oil at 175 °C under a Fryer Thermostat with high-limit cutoff, a four-burner Burner Range, and often a Salamander Broiler broiler. Each appliance bolts to an Equipment Anchor Rail anchor.

Everything that produces grease vapor sits under the Ventilation System system's stainless Hood Canopy, built to NFPA 96 Type I requirements. Removable Baffle Grease Filter panels strip grease by forcing the airstream through sharp directional changes; the roof-mounted Exhaust Fan pulls about 2,000 m³/h through the plenum, with a Grease Cup catching condensate at the fan base, while Makeup Air Vent intakes replace the exhausted air so the burners are not starved.

Grease fires are the dominant hazard, so an NFPA 17A Fire Suppression System hangs in the hood: a pressurized Wet Chemical Tank of potassium-salt wet chemical, aimed Suppression Nozzle heads over each appliance, Fusible Link triggers that melt near 182 °C, a manual Manual Pull Station by the exit, and a Mechanical Gas Shutoff that closes the propane supply the instant the system discharges. The wet chemical saponifies burning oil into a smothering foam crust.

Power, gas, and water

The Electrical Power System centers on a 7 to 12 kW Onboard Generator — a small engine spinning a Stator Assembly and Rotor Assembly at 3,600 rpm inside an acoustic Generator Enclosure that keeps noise near 65 dBA at 7 m, a common vending-permit limit. A Shore Power Inlet accepts 50 A commissary or event power, and a Transfer Switch interlocks the two sources ahead of the GFCI-protected AC Load Center.

Cooking heat comes from the Propane (LPG) System: two 45 kg LPG Cylinder bottles in a crash-rated external Cylinder Mounting Rack (NFPA 58 prohibits cylinders inside the body), a two-stage Two-Stage Regulator dropping tank pressure to the 28 mbar appliance standard, leak-tested Gas Manifold and Piping piping, and a low-mounted Gas Leak Detector since propane pools at floor level.

The Water System reads straight from the health code. A food-grade Fresh Water Tank of 150 to 230 L feeds a 12 V diaphragm Water Pump delivering about 10 L/min at 2.8 bar; the Water Heater supplies at least 38 °C to a mandatory dedicated Handwash Sink and 49 °C to the Three-Compartment Sink used for wash-rinse-sanitize utensil cleaning. The Grey Water Tank must hold at least 15 percent more than the fresh tank so the truck cannot keep serving after it has nowhere to put wastewater. Cold chain compliance falls to the Refrigeration Equipment group — a Reach-In Refrigerator at 2 to 5 °C, a chilled Refrigerated Prep Table, an undercounter Undercounter Freezer, and a Temperature Logger producing records for inspectors.

Service operations

Transactions flow through the Serving Window: a 1.8 m Window Frame with sliding Sliding Window Pane, a code-required Insect Screen against insects, a fold-down Fold-Down Counter, and a Menu Board under the Window Awning. Most jurisdictions tie the truck to a licensed commissary where it fills water, dumps grey water and grease, restocks, and parks overnight; the daily cycle is commissary, service window, commissary. A typical truck serves 100 to 300 covers per shift from a two- to four-person crew working in roughly 4.5 m² of clear floor.
