Scraped Cooking Kettle

A scraped cooking kettle cooks and mixes viscous, sticky, or particulate foods that a plain jacketed kettle cannot handle on its own. Products like tomato paste, cheese sauce, caramel, fruit preserves, gravy, and processed meat emulsions cling to the hot wall and scorch the instant they stop moving. This kettle solves that with a scraped-surface agitator: an anchor sweep that follows the curve of the bowl carries spring-loaded blades that wipe the heated wall on every pass, continuously renewing the thin film of product against the metal and keeping heat transfer high without burning. The jacket can both heat with steam and cool with water, so a single vessel runs the whole batch cycle from cook to cool.
The two parts that define the kettle are the heated Cooking Vessel and the Scraped-Surface Agitator that sweeps it. Around them sit the jacket, drive, utility control, sealing, weighing, and cleaning systems that turn it into a controlled batch processor.
Cooking vessel and jacket
The Cooking Vessel is a 316L stainless Inner Bowl with a round bottom that the anchor sweep follows closely. A Rim Reinforcement Ring stiffens the top and supports the cover and drive. Internal Flow Baffle plates break the rotational flow so the batch turns over instead of just spinning with the agitator, and a Sight Glass lets the operator watch the cook.
The Heating Jacket is a dual-service pressure shell. Steam enters the Steam Inlet Port for heating and condensate leaves the Condensate Outlet; for cooling, the same space is fed through the Cooling Water Port connections with chilled or tower water. Because the jacket holds steam pressure it is built to ASME Section VIII and protected by a Safety Relief Valve. Jacket Insulation under a Outer Cladding skin saves energy and protects operators.
Scraped-surface agitator
The Scraped-Surface Agitator runs an Agitator Shaft carrying Anchor Sweep Arm sweeps shaped to the bowl. Mounted on the arms are PTFE Scraper Blade elements, usually PTFE, pressed against the wall by Scraper Load Spring loading so they maintain contact as they wear. Each pass strips the heated film and replaces it with fresh product, which is what prevents scorching and keeps the cook even. For products that also need particle reduction or emulsification, an optional High-Shear Mixing Head adds a rotor and Stator Screen that homogenizes the batch in place.
Drive and shaft seal
The Agitator Drive is top-mounted: a Agitator Motor turns through a Helical Gearbox to drive the agitator at 10 to 60 rpm, set by a Variable Frequency Drive. Because the shaft passes through the pressurized, hygienic vessel, it runs in a Mechanical Shaft Seal double mechanical seal with Seal Face Ring rings of silicon carbide and a sterile barrier fluid between the faces, so neither product escapes nor contamination enters.
Utility control
The Utility Control group manages the jacket. During the cook a Steam Control Valve modulates steam to hold the product temperature read by the RTD, with a Y-Strainer and Steam Trap on the steam and condensate sides. When the batch finishes, the controller closes the steam, drains the jacket, and opens the Cooling Water Valve to flood the same jacket with cooling water, dropping the product temperature fast to lock quality and stop overcooking. A Condensate Pump clears the jacket between modes.
Cover, discharge, and weighing
The Sealed Cover seals the vessel and carries the drive, a Ingredient Charge Port pair for ingredients, a Vent Port, and a CIP Spray Port for cleaning. Viscous product leaves through the Bottom Outlet Valve, a flush-mounted outlet valve driven by a Pneumatic Cylinder and set level with the bowl bottom so the kettle empties cleanly. The Support Frame mounts the kettle on Weigh Load Cell legs so the operator can weigh ingredients directly into the vessel and dose by mass.
Control, cleaning, and use
The Control Panel runs the recipe from a PLC Module and HMI Touchscreen: it sequences charging, heating to setpoint, holding, cooling, and discharge, and logs the temperature curve for food-safety records. A typical recipe meters water into the bowl by load cell, starts the agitator at low speed, ramps the jacket steam until the product RTD reaches the cook setpoint, holds for a timed kill step, then switches the jacket to cooling water and drops the batch to a safe fill temperature before discharge. Because the agitator never stops during heating, the wall film is renewed continuously and the recorded temperature is the true product temperature, not a hot spot at the wall.
Cleaning is done in place by spraying detergent and rinse through the CIP port while the agitator turns, reaching the whole interior without disassembly. The PTFE scraper blades are wear parts and are inspected on a schedule, since worn blades lose wall contact and let product scorch; the mechanical seal barrier fluid is also checked, because a failed seal can contaminate a batch. Compared with a plain steam-jacketed kettle, the scraped version costs more and adds a drive, a seal, and a cooling circuit, and it earns that by cooking the thick, fouling products that would otherwise burn and by cooling them fast enough to protect quality, which is why it is standard in sauce, dairy, confectionery, and prepared-food plants.
