Continuous Cooker

A continuous cooker heats food without interruption as a mesh belt carries it through an insulated steam tunnel. Where a batch kettle or retort cooks one lot at a time, a continuous cooker holds a steady-state thermal profile and a fixed dwell time, so every piece of product receives an identical cook. This makes it the standard for high-volume lines: poultry and meat patties, sausages, ready meals, blanched vegetables, par-cooked rice and grains, and pasta. Product enters at one end, passes through a series of temperature and humidity zones, and exits cooked to a target core temperature determined by belt speed and zone settings.
The two parts that define the machine are the Cooking Tunnel, the insulated enclosure that holds the heat, and the Conveyor System that sets dwell time. Around them sit the steam, control, drainage, exhaust, and cleaning systems that make continuous cooking stable and sanitary.
Cooking tunnel
The Cooking Tunnel is a Tunnel Shell of 304 stainless steel wrapped in Mineral Wool Insulation to hold the cook temperature and protect operators from the hot skin. Inside, Zone Divider Curtain curtains separate the tunnel into independently controlled sections, limiting cross-flow of steam and temperature between a hot zone and a cooler holding zone. Hinged Access Door panels and Sight Glass windows allow inspection and cleaning along the length without breaking the line apart.
Conveyor and dwell time
The Conveyor System runs a Stainless Mesh Belt of stainless wire that lets steam reach the product from below as well as above and drains condensate freely. The belt rides on Belt Support Roller supports and is driven by Drive Sprocket gears. A Belt Tracking Guide guide keeps the wide belt centered, and a Belt Tension Unit maintains constant tension as the belt expands when it heats. Dwell time, the single most important cook variable, is set by belt speed: a longer tunnel or a slower belt gives more cook time, so the same machine can par-cook in two minutes or fully cook in forty.
Steam system
Heat is delivered by the Steam System. A Steam Distribution Header distributes saturated steam at 15 to 60 psi to rows of Steam Injection Nozzle injectors aimed into each zone. A Steam Control Valve per zone modulates steam flow to hold the zone setpoint, with a Y-Strainer protecting the valves from scale and a Steam Trap at each low point draining condensate so only dry steam reaches the product. Steam cooking at atmospheric pressure tops out near 98 °C, which is enough to cook most foods while keeping the surface moist.
Zone control
The Zone Temperature Control holds each section at its own temperature and humidity. A RTD Temperature Probe probe and a Humidity Sensor feed a Zone PID Controller running a PID loop that drives the zone steam valve. Splitting the tunnel into zones lets a recipe ramp the product up gradually, hold it through the kill step, then ease it into a lower-temperature finish, all in one pass.
Drive, drainage, and exhaust
The Conveyor Drive turns the belt through a Conveyor Motor and Helical Gearbox, with a Variable Frequency Drive setting speed and a Belt Speed Encoder confirming the actual belt rate so dwell time is verified, not assumed. Cooking releases water that collects in the Condensate System: sloped Sloped Drain Pan trays catch drip and a Condensate Pump removes it. The Exhaust System system runs Exhaust Fan units through a Mist Eliminator to pull vapor and hold a slight negative pressure so steam does not billow from the tunnel ends.
Cleaning and control
Food cookers must be cleaned daily, so the Clean-in-Place System sprays detergent and rinse water through fixed CIP Spray Header and rotary Rotary Spray Ball heads driven by a CIP Supply Pump, washing the tunnel walls and belt without disassembly. The whole machine is run from the Control Panel, where a PLC Module and HMI Touchscreen store recipes, sequence the cook, and log temperature and belt-speed trends for food-safety records. A motor DC Contactor set and an E-Stop Button pair complete the safety system.
Materials and use
Contact surfaces are 304 or 316 stainless steel with sanitary, crevice-free welds and a smooth finish that sheds product and resists harboring bacteria. The open mesh belt, the sloped drains, and the CIP coverage are all there to make a hot, wet, food-soiled machine cleanable on a tight nightly window. Continuous cookers are chosen over batch equipment when a plant needs steady output, repeatable cook records, and a fixed cost per kilogram, which is why they anchor most large prepared-food and protein lines.
