Overview

An industrial bread slicing line turns cooled whole loaves into sliced, bagged, and closed product ready for retail, running at one to several thousand loaves per hour. It is the last step before distribution in a plant bakery and ties together three operations that are usually separate machines: slicing the loaf into uniform pieces, dropping the sliced loaf into a bag, and closing that bag. Doing all three in one synchronised line removes the manual handling between them, which both raises throughput and keeps the bread clean.

A loaf enters at the Infeed Section, is cut by the Slicing Head driven by the Blade Drive, is inserted into a bag by the Bagging Unit, and is sealed by the Closure Unit unit before leaving on the takeaway belt. The Control Panel keeps every station in step so loaves never collide or arrive at an empty bag.

Infeed and alignment

Loaves must reach the blades square and evenly spaced or the slices come out skewed. The Infeed Section section carries each loaf on the Infeed Belt, centres it between adjustable Side Guide rails, and squares it with Aligner Paddle paddles. A Feed Pusher then advances the loaf through the blade bank at a controlled rate. Photoelectric sensors track the gap between loaves so the feed matches the slicer cycle and no loaf is fed before the previous one clears.

The slicing head

The cut is made by the Slicing Head, a bank of thin parallel Slicing Blade knives held in a Blade Frame. Each blade makes one cut, so a 28-blade head produces 29 slices in a single pass of the loaf. The slice thickness is fixed by the Blade Spacer elements between the blades: change the spacers and you change the slice thickness, from thin sandwich slices to thick toast cuts. The blades are tensioned by Tension Bolt bolts at the frame ends and clamped by Blade Clamp fittings; correct tension is what gives a clean cut without tearing the crumb. A Blade Scraper wipes dough off the blades so buildup does not drag on the loaf.

Most high-speed lines use toothed or scalloped blades that saw through the crust rather than press through it, which keeps the crumb from compressing. The blades are a wear item and are changed as a complete set during the periodic blade swap.

Blade drive

The blade bank reciprocates rather than rotates. The Blade Drive uses a Servo Motor driving a heavy Flywheel through a belt; the flywheel smooths the load, because the blades cut hardest at mid-stroke and coast at the ends. A pair of Drive Crank cranks and Connecting Rod connecting rods convert the rotation into the vertical stroke of the blade frame, which slides on Guide Slide guides. Running the frame at 300 to 700 strokes a minute while feeding the loaf forward produces the saw-like action that cuts cleanly at line speed.

Bagging

Once sliced, the loaf must go straight into a bag before it dries out or the slices fan apart. The Bagging Unit holds a stack of wicketed bags in the Bag Magazine. The Bag Opener with its Vacuum Cup cups peels the front film back and a Bag Blower air jet inflates the bag to hold it open. The sliced loaf is compressed by the Loaf Funnel and driven into the open bag by the Insertion Pusher. Compressing the loaf during insertion is what lets a wide sliced loaf enter a narrower bag without crushing the end slices.

Closure

The filled bag moves to the Closure Unit unit, where Neck Gatherer jaws pleat the bag neck and either a Clip Applicator presses a plastic clip from the Clip Magazine strip, or a Twist-Tie Wheel twists a wire tie around the gathered neck. The choice of clip versus tie is set by the bakery and the retailer. A sensor confirms a bag is present before the closure fires so the unit does not waste clips.

Conveyors, crumb handling, and safety

Short Transfer Conveyors link the stations and the Takeaway Belt carries finished loaves to packout. Slicing sheds a steady stream of crumbs, so the Crumb Collection System catches them in a Crumb Tray, moves them with a Crumb Auger and Crumb Fan into a Crumb Bin, and keeps the bagger and floor clean. Because the reciprocating blades are dangerous, the Safety Guarding encloses the blade zone with fixed panels, interlocked doors, an Interlock Switch on each door, and an infeed Light Curtain that stops the blades if a hand reaches in.

Variants and use

Slicing heads come in reciprocating-frame and continuous-band styles; band slicers use endless blades for very high speeds, while frame slicers are simpler to maintain and re-blade. Lines are offered standalone for mid-size bakeries or fully integrated with upstream cooling and downstream packout for plant bakeries. The line is sized from the loaf rate and loaf dimensions, which set the slicer cycle, the bag size, and the conveyor pitch.
