Overview

A poultry cut-up line takes whole chilled chickens or turkeys and portions them into the standard retail cuts: wings, breast fillets, thighs, drumsticks, leg quarters, and the back and frame. Each carcass is locked onto a shaped carrier so it always sits in the same pose, then a series of modules with circular blades and guides find the natural joints and cut the bird apart in sequence as the line moves it through. By holding every bird identically, the machine can cut each one the same way at thousands an hour, replacing skilled knife work and giving uniform, accurately weighed cuts that feed automatic packing.

Birds ride the Cone Conveyor through the Wing Module, the Breast Module module, the Leg Module, and the Back Module, after which the Grading Station station weighs and sorts the cuts. The Frame and Guards carries the modules and the Control Cabinet keeps them in step.

The cone conveyor

Accurate cutting depends on holding each bird the same way, which is the job of the Cone Conveyor. At the Loading Station station a carcass is pressed onto a shaped Carrier Cone, so the keel, joints, and wings all sit in a known position, and a Cone Chain running on Ball Bearing units carries the cones past each module while a Index Drive advances them one pitch per cutting cycle. Because the cone fixes the geometry of every bird, the fixed blades downstream find the right joint every time without needing to sense each carcass individually.

Wing and breast

The Wing Module comes first. A Wing Guide spreads each wing and a Wing Blade cuts it free at the shoulder joint, then an optional Wing Segmenter splits the wing into drumette, flat, and tip. Next the Breast Module module recovers the most valuable meat. A Keel Scorer cuts along the keel bone to start the fillet, a pair of curved Filleting Blade units follow the rib cage to lift each breast fillet whole, a Tender Puller takes the small tender muscle from beneath, and a Meat Scraper recovers meat left on the frame. Following the bone closely is what gives a high breast yield, which is the number that decides the line's profit.

Legs and back

The Leg Module handles the dark meat. A Leg Guide positions each leg, a Hip Blade cuts the leg quarter free at the hip joint, and a Knee Blade can split it into thigh and drumstick at the knee. What remains then passes the Back Module, where a Back Blade frees the back portion against a Back Guide and a Frame Cutter splits the remaining frame for stock or rendering. Cutting at the joints rather than through bone keeps bone chips out of the meat and gives clean, saleable pieces.

Grading and sorting

Cuts vary in size, so the Grading Station station sorts them. A Sorting Belt carries each cut past a Checkweigher with a Load Cell, an Microcontroller on a Bare PCB reads the weight, and a row of Diverter gates push each piece into the correct size or product lane. Sorting by weight lets a plant fill fixed-count or fixed-weight trays and route, say, large breast fillets to one customer and small ones to another, which raises the value recovered from each bird.

Frame, control, and use

Every module mounts on the Frame and Guards, a stainless Frame Weldment with interlocked Guard Door panels that stop the blades when opened, Drip Tray trays for trim, and Sheet Metal Panel cladding for washdown. The Control Cabinet cabinet holds a PLC Controller, an LCD Panel touchscreen, a Power Supply, a Line Speed Drive, and safety Relay outputs that set the cut configuration, index the cones to each module through their Servo Motor and Helical Gear Pair drives, and track yield per part so the plant knows exactly how much breast, leg, and wing each batch produced. The cut-up line follows chilling, which follows the Poultry Evisceration Line, and feeds tray packing or further deboning. It turns a whole bird into the specific cuts a market wants at high speed and with the weight accuracy that automatic packaging needs.
