Bread Cooling Tower

A bread cooling tower cools finished loaves between the oven and the slicer by lifting them through a tall ventilated column on a chain of swinging trays. Bread leaves the oven with a core temperature near 95 C. It cannot be sliced cleanly while hot because the crumb tears and gums the blades, and it cannot be bagged because trapped steam condenses inside the wrapper and breeds mould. The tower buys the 20 to 90 minutes of cooling time the loaf needs while taking up only a few square metres of floor, where a flat cooling conveyor giving the same dwell would run for tens of metres.
Loaves enter at the bottom, ride up one side of the Cooling Column Structure on the Carrier System, cross over the top, and come back down the other side, all while air drawn by the Ventilation System system passes over them. By the time a loaf reaches the discharge it has dropped to 28-35 C, cool enough to slice and wrap. The whole sequence is paced by the Control Panel so the line never has to stop for cooling.
Column structure
The Column Frame is a tall welded steel column, often 4 to 9 metres high, that carries the entire load of trays, chain, and air system. Vertical Carrier Guide Rail runs keep the trays aligned as they travel up and down, and Chain Sprocket Station sets at the top and bottom turn the chain around the ends of the loop. Because the column is tall, it includes a caged Access Ladder and grated Access Platform sections so technicians can reach the chain turns and sprockets for maintenance.
Carrier system and swinging trays
The lift is done by two parallel Carrier Chain loops running in step. Hung between them are dozens of Swinging Tray units, each carrying one or more loaves. The trays pivot on Tray Pivot Pin pins so they hang level by gravity whether the chain is climbing, crossing the top, or coming back down. A Tray Guide Roller on each tray rides the guide rail to keep it from swaying. This pendulum arrangement is what lets the same tray stay loaf-side-up through the full loop without tipping the bread off at the top turn. A Chain Tensioner keeps both chains evenly tight so the trays stay synchronised.
Drive and indexing
A geared Servo Motor working through a Helical Gearbox turns the head Drive Shaft, which drives both top sprockets together. The chain can run continuously for steady throughput or index one tray pitch at a time so loading and discharge happen at fixed positions. A Position Encoder tracks tray position for that indexing, and an electromagnetic Holding Brake holds the loaded chain whenever the tower stops, since a column full of trays would otherwise back-drive the motor.
Ventilation and cooling
Cooling is by forced convection. Exhaust Fan units at the top draw air up through the column, pulling cool ambient air in through filtered Intake Louvre openings at the bottom. Internal Airflow Baffle plates steer the air across the trays rather than letting it short-circuit up the open centre. The control system watches air temperature and uses Humidity Sensor readings to manage moisture: if humid air is not exhausted fast enough it will condense on the cooler loaves near the top and leave them sticky. Counterflow ventilation, with the freshest air meeting the nearly cooled loaves, keeps the cooling rate high along the whole path.
Loading and discharge
The Loaf Infeed Station station meters loaves onto empty trays. Loaves arrive on the Infeed Conveyor, are squared up by Guide Plate rails, and a Loading Pusher driven by a Pusher Cylinder slides each loaf onto a tray as it passes. At the Discharge Station station a Sweep Arm, actuated by the Sweep Cylinder, sweeps the cooled loaf off its tray onto the Discharge Conveyor through a Discharge Chute, leaving the tray empty to circle back for reloading. Photoelectric sensors confirm that a tray is present and a loaf is in position before each push or sweep, so the machine never loads onto a full tray or sweeps an empty one.
Enclosure, control, and hygiene
The column is closed by the Column Enclosure, built from insulated Cladding Panel sections with gasketed Access Door panels and View Window openings. Closing the column lets the fans control airflow instead of fighting room drafts, and keeps dust and insects off the bread. The Control Panel runs a PLC Module that sequences loading, lift indexing, and discharge while driving the chain and fans through Variable Frequency Drive inverters, with the recipe set on an HMI Touchscreen. Slicing and wrapping downstream depend on a steady supply of correctly cooled loaves, so the tower's pacing logic is tied into the line's overall control.
Variants and use
Towers are built as swinging-tray machines, as serpentine-belt machines that snake a single belt up and down, and as carousel designs. Tray towers suit discrete products like loaves and large rolls; belt towers suit smaller items fed in a continuous stream. The same structure can be adapted for ambient cooling, refrigerated cooling, or controlled-humidity conditioning. Industrial and plant bakeries are the main users, sizing the tower from loaf throughput and the cooling time their product needs, which together set the number of trays and the air flow.
