Fluidized-Bed Freezer

The fluidized-bed freezer freezes small, uniform, free-flowing food pieces at the highest heat-transfer rates of any air-blast freezer. It works by fluidization: cold air is forced upward through a perforated deck fast enough to lift the product so it floats on a cushion of air, behaving almost like a boiling liquid. Every surface of every piece is surrounded by moving cold air, so freezing is fast and the pieces cannot stick to each other or to the deck.
The method suits peas, sweetcorn, diced carrot and pepper, berries, and small shrimp: pieces roughly 5 to 25 mm across that are light enough to fluidize. It is the fastest route to a true individually quick frozen product for these items, with dwell times as short as 4 to 12 minutes and throughputs up to several tonnes per hour on a single deck.
Insulated Enclosure
The Insulated Enclosure seals the cold space. Insulated Panel insulated panels and a sealed Vapor Barrier hold the interior at -35 to -40C, with a top Return-Air Hood collecting return air for recirculation to the coil. Heated Access Door doors give cleaning access and a heated Inspection Window lets operators watch the bed without opening the cabinet, since the depth and motion of the fluidized bed are the main visual checks that freezing is going well.
Fluidizing Bed
The Fluidizing Bed is the core of the machine. The Perforated Deck is a stainless plate with a precise hole pattern that distributes the upflow air evenly across its whole area; uneven air would leave dead spots where pieces drop and clump. The deck is vibrated by Deck Vibrator drives, which does two things at once: it helps fluidize the bed and it conveys the product gently from in-feed toward discharge. The deck floats on Deck Isolation Spring springs and Coil Spring isolators so its vibration is not transmitted into the frame, and a flexible Deck Seal keeps the pressurized air below it from escaping around the edges. A Weir Gate at the exit sets how deep the bed runs.
Refrigeration and Airflow
The Refrigeration Circuit circuit cools the recirculating air. Air passes over the finned Evaporator Coil, fed through an Expansion Valve and Refrigerant Header and piped in insulated Refrigerant Piping at around -40C. A heated Drip Pan catches condensate and two Pressure Sensor units watch the circuit.
Fluidization needs far higher air pressure than an ordinary belt freezer, so the Air Circulation System uses high-static Centrifugal Fan units rather than axial fans. Each fan, on its Fan Motor, pressurizes the under-deck Air Plenum and drives air up through the perforations at 5-12 m/s, then the air returns through the Return Duct to the coil. Air Damper dampers trim the airflow so it matches the product: too little and the bed slumps, too much and light pieces blow off the deck.
Feed and Discharge
The Feed and Discharge section gets product on and off the deck cleanly. A vibratory In-Feed Shaker spreads incoming product across the full deck width, a Leveling Roller sets an even starting bed depth, and a Servo Motor drives the spreader. At the far end, frozen pieces leave over the weir into a Discharge Chute, with a Discharge Shaker knocking apart any pieces still clinging together.
Defrost System
Moisture from the product freezes onto the coil, and because the air pressure is high, even a thin frost layer raises fan load and cuts airflow noticeably. The Defrost System system clears it between campaigns. A Hot-Gas Defrost Valve sends hot gas through the coil and a Defrost Spray Header water spray speeds the melt, with Heating Element heaters on the pan and doors and a heated Defrost Drain carrying the water out.
Control and Construction
The Control System system runs the unit from a PLC and Operator HMI touchscreen. Four Variable-Frequency Drive drives set fan speed, which is how the operator tunes fluidization for each product, and four Temperature Sensor probes track enclosure and product temperature. Relay contacts sequence fans, valves, and defrost through a Wire Bundle loom.
The machine sits on a stainless Frame and Supports with Support Leg legs and adjustable feet, all built for washdown since these freezers handle wet produce and need frequent cleaning. Larger plants often run a two-stage layout: a short fluidized-bed first stage that crust-freezes and separates the pieces, feeding a belt or tunnel freezer that finishes the cores. This pairs the fluidized bed's separation strength with the cheaper holding capacity of a longer belt.
