Batter and Breading Line

The batter and breading line applies a multi-layer coating to food in a single pass. Raw pieces enter at the in-feed, pass through a pre-dust station, a batter station, and a breading station in sequence, and leave fully coated and ready for the fryer or freezer downstream. The line exists because hand-coating cannot hold consistent pickup or keep pace with modern protein and vegetable plants that run several tonnes per hour.
Coating quality is judged by pickup, the weight of coating per piece, and by adhesion, how well the layers stay attached through frying and freezing. Both depend on getting each stage right and on the order of the stages: a dry flour layer first, a wet batter that grips the flour, then dry crumbs that grip the batter. Each station has its own controls, and the Control System keeps them synchronized.
In-Feed and Spacing
The In-Feed Section section sets up everything that follows. Raw product lands on the In-Feed Belt, driven by a In-Feed Motor, and is steered by Product Guide rails into lanes. A Spacing Drive runs slightly faster than the in-feed belt, opening gaps between pieces so they enter the coating stations separated rather than touching. Pieces that touch share coating and stick together, so spacing directly affects yield. The belt rollers run on Ball Bearing units sealed against flour and washdown water.
Pre-Dust Stage
The Pre-Dust Applicator applicator lays a thin flour layer on wet product so the batter has something to grip. Flour falls from the Pre-Dust Hopper onto a Pre-Dust Bed Belt belt that carries a flour bed under the product, while a Pre-Dust Scatter Roller roller dusts the top surface. A Pre-Dust Air Knife air knife blows off the excess so only a bonded film remains, and a Pre-Dust Return Auger returns the shed flour to the hopper. A single Pre-Dust Motor drives the scatter roller and bed together.
Batter Stage
The Batter Applicator station is the most control-sensitive part of the line. Liquid batter is mixed and held in the jacketed Batter Tank, kept homogeneous by the Batter Mixer and cold by the Batter Chiller. Cold batter, held at 4-10C, has higher viscosity and gives more predictable pickup; warm batter thins out and runs off. A Batter Pump feeds the Batter Curtain Manifold manifold overhead, which pours a continuous sheet of batter over the product, while a Batter Submerger Belt dips the pieces from below so the underside is coated too. A Batter Air Knife then blows the surplus back into the tank, setting final pickup. A Pressure Sensor on the manifold confirms even curtain flow and a Servo Motor drives the mixer.
Breading Stage
The Breading Applicator applies the dry crumb coat to the wet battered surface. Crumbs feed from the Breader Hopper onto a Crumb Bed Conveyor conveyor that carries a crumb bed under the product, and a Crumb Curtain Feeder feeder showers crumbs over the top. A Crumb Press Roller pressure roller embeds the crumbs into the batter so they stay attached, and a Breader Air Knife air knife clears loose crumbs that would otherwise burn in the fryer. The Breader Motor drives the bed and feeder. Crumb type sets the look of the finished product, from fine cracker meal to coarse Japanese-style flakes.
Recovery and Recycling
Coating media is expensive, and a coating line sheds a large fraction of it. The Recovery and Recycling section captures and reuses what falls off. A Recovery Sieve grades recovered crumbs, removing fines and clumps so only good crumb returns to use, and a Recovery Auger and Crumb Bucket Elevator lift it back to the breader hopper. On the batter side, a Batter Return Pump sends drained batter through a Batter Return Strainer strainer back to the tank. Good recovery cuts coating cost by a wide margin and keeps the floor clean.
Conveyors, Control, and Construction
Between stations the Through-Line Conveyors system moves product on hygienic Modular Belt sections, each driven by its own Conveyor Motor through a Drive Belt and running on Ball Bearing rollers. Transfer Comb dead plates bridge the gaps so delicate coated pieces transfer without breaking the coating.
The Control System system runs the line from a PLC and Operator HMI touchscreen. Each belt and applicator has a Variable-Frequency Drive so speeds stay matched as the operator changes products, and Level Sensor units keep hoppers and the batter tank fed, switching loads through Relay contacts wired by a Wire Bundle loom. The whole machine sits on a stainless Frame and Enclosure with removable Catch Tray trays and washdown panels, since coating lines need daily cleaning to meet food hygiene rules. Lines are configured to the product: some skip the pre-dust for tempura-style coatings, others add a second batter and breading pass for a thick crust.
