Overview

An egg breaking and separating line takes graded shell eggs and converts them into liquid product: separated yolk, separated albumen, or whole egg. The machine is built around a rotating breaking carousel carrying many breaking heads, each of which cracks one egg, parts the shell, and decides where the contents go. A mid-size line runs 120,000 eggs per hour, which at 36 heads means each head completes a cycle a few times per second while the carousel turns continuously.

The line sits downstream of an egg grader and upstream of pasteurization and packing. It has ten major subsystems: the infeed and orientation unit, the breaking carousel, the inspection and diversion unit, the shell handling system, the collection manifold, the pumping and filtration unit, the clean-in-place system, the main drive, the control system, and the stainless frame.

Infeed and orientation

Eggs arrive from the grader on a roller bar conveyor. The polyacetal roller bars spin under each egg, which makes the egg rotate until its long axis lines up with the bars and its large end faces the same way every time. Correct orientation matters because the air cell sits at the large end, and cracking there gives a clean break with fewer shell fragments. Each egg is then lifted by a silicone vacuum cup and a transfer finger, guided by a profiled indexing cam, and seated large-end-up into an orientation loading cup. A servo motor indexes the infeed in step with the carousel, and a vacuum sensor confirms each cup has picked up an egg.

Cracking and separation

Inside each breaking head a hardened cracking knife scores and cracks the shell across its waist. Two shell grippers then take hold of the two halves and pull them apart so the contents drop out cleanly. The contents fall onto a slotted separator cup: the slots let the runny albumen drain through into the white drain channel while the heavier intact yolk stays cradled on the cup. This is the core of the machine. If the yolk membrane breaks, yolk contaminates the white and the cup is flagged. The knife, the grippers and the cup are all moved by cam followers running on a fixed cam track, with return springs resetting each motion. Air and vacuum reach the moving heads through a rotary union at the center of the carousel ring.

Inspection and diversion

Every cup passes an optical blood and rot sensor that reads the color and clarity of the held contents. Blood spots, meat spots, off-color rot, or a broken yolk all trigger a flag. When a cup is flagged, a divert valve sends that cup's contents to the reject trough instead of the food stream, so one bad egg does not spoil a whole tank. The sensors feed interface boards carrying an controller and passives, wired back to the PLC through a sensor harness and connectors. Diversion is per cup and per cycle, so the rejection rate tracks incoming egg quality without slowing the line.

Shell and product handling

Once emptied, each head is cleared by an air-blast ejector that blows the spent shell halves into the drop chute. A discharge auger, driven by a motor on bearings and seals, carries shells out for disposal or rendering. The good product collects in three separate routes in the manifold: the yolk trough, the white trough, and the whole-egg trough for runs where no separation is wanted. Drip shields between the troughs keep the streams from cross-mixing, and header pipes route each stream to the pumps.

Pumping, filtration, and CIP

Sanitary lobe pumps move the liquid egg at low shear so the yolk membranes and the white structure are not damaged. Each stream passes an in-line strainer that catches stray shell and chalazae, then fills a balance tank that levels the flow before pasteurization. A mass flow meter logs yield on each stream. Sanitation is handled by the clean-in-place system: a recirculation pump pushes hot detergent and rinse from the solution tanks, heated by a heater, through routing valves and out of spray jets aimed at every head and trough. Because egg proteins set hard when heated, daily CIP at controlled temperature is required.

Drive, control, materials, and use

The carousel turns on a servo drive using a servo motor built from a stator and rotor, geared down through a gearbox and gear sets to the output shaft. An encoder keeps the heads, infeed and ejectors in phase. The control cabinet holds a PLC, an HMI touchscreen, power supplies, relays and IO modules. Every food-contact part is 304 or 316L stainless or a food-grade polymer, and the whole machine stands on a hygienic frame with sloped drip pans and leveling feet for daily washdown. Lines scale from 24 heads for regional breakers to over 200 heads for large processors. The liquid yolk, white and whole egg they produce go to bakeries, mayonnaise and pasta makers, and into dried and frozen egg products.
