Chocolate Enrober Product
Overview
A chocolate enrober coats centres — biscuits, pralines, bars, wafers — in a continuous film of tempered chocolate. Pieces ride an open wire-mesh belt through a falling curtain of chocolate that coats the top and sides, while a roller details the base; surplus is blown and shaken off to set the coating weight, and the pieces pass into a cooling tunnel where the coating sets. The detail that makes or breaks the result is tempering: the cocoa butter must be crystallized into its stable form before enrobing, or the finished coating will be dull, soft and prone to bloom. So an enrober is really two machines in one — a tempering unit feeding a coating section — and everything downstream is about controlling how much chocolate stays on the piece.
How it works
Centres are carried on the Wire-Mesh Belt Conveyor, a stainless wire-mesh belt whose open weave lets excess chocolate drain straight back to the sump. The belt is driven by a variable-speed gearmotor so dwell under the curtain can be tuned to the product.
Chocolate is conditioned by the Tempering Unit, a scraped multi-zone column that cools the mass while shearing it to seed stable cocoa-butter crystals, then warms it slightly to the working point. The tempered chocolate flows to the Chocolate Curtain System, where a heated sump and gear pump lift it to a slotted head that overflows into a continuous falling curtain; a flood grid wets the tops of the centres first, then the curtain coats them fully as the belt passes through.
Coating weight is trimmed downstream. The Excess-Removal Blower drives an air knife across the belt to blow off surplus, and the Vibrating Section shakes the belt to shed more and smooth the surface. The Bottom Detailer runs a licking roller against the base of each piece to coat the bottom and wipe the tail. Coated pieces transfer across the Cooling Tunnel Interface onto the cooling-tunnel belt, where the tempered coating sets to a glossy, hard finish. The Control System holds chocolate temperature through the sump and tempering loops and coordinates belt speed, curtain flow and blower so coating weight stays consistent.
