Overview

A conche is the machine that turns a coarse, gritty chocolate paste into the smooth, glossy mass people recognise as good chocolate. After cocoa nibs are ground and mixed with sugar, milk powder, and cocoa butter, the result tastes acidic and feels sandy on the tongue. Conching fixes both. By shearing and folding the mass for hours, sometimes days, at a controlled temperature while passing warm air across it, the conche coats every solid particle in cocoa butter, rounds off sharp particle edges, and drives off the volatile acids and moisture that make raw chocolate harsh.

The process is named after the shell-shaped trough of the original longitudinal machine. Modern conches keep the same idea: a heated Mixing Trough holds the mass while a Rotor System works it, the Heating System holds temperature, and the Aeration System system removes unwanted volatiles. The whole cycle is run as a timed recipe by the Control Panel.

The mixing trough

The chocolate sits in the Mixing Trough, a double-walled stainless vessel. The inner Trough Shell holds the mass and is faced with a hard Trough Liner because sugar crystals and cocoa solids are abrasive over long runs. Surrounding it, the Trough Jacket carries warm water that holds the mass at the conching temperature, which runs hotter for dark chocolate than for milk chocolate. The Trough End Plate plates close the ends and carry the rotor bearings, and a Shaft Seal at each shaft exit keeps the sticky mass from working its way out. A hinged Trough Lid retains heat and channels the aeration airflow over the surface.

Rotors: the work of conching

The refining is done by the Rotor System. One or two Rotor Shaft shafts carry an array of tools. Mixing Paddle paddles fold and turn the whole mass so no part sits unworked. Shear Bar bars shear the mass against the trough wall, breaking up agglomerates of sugar and cocoa. Smearing Roller rollers smear the mass in a thin film, which is what physically coats each particle in cocoa butter and is the step that produces the final smooth mouthfeel. Scraper Blade blades keep the heated wall clean so heat transfers evenly and nothing scorches. Early in the cycle the mass is a dry, crumbly powder phase that needs high torque; as conching proceeds it becomes a flowing liquid, and the rotor work shifts from kneading to gentle smearing.

Drive and load

Because the mass is heavy and viscous and the rotors turn slowly for hours, the Drive System is built for high torque rather than speed. A Servo Motor drives a heavy-duty Helical Gearbox through a belt and Drive Coupling. A Torque Sensor reads the mixing load, which is one of the best live indicators of how the conche is progressing: as cocoa butter coats the particles and the mass thins, the torque drops in a characteristic way. A Overload Clutch protects the drive if a cold or stiff charge would otherwise stall the rotors.

Heating and aeration

The Heating System is a closed warm-water loop. A Circulation Pump moves water through the jacket, a Water Heater with Heating Element elements raises it, and a Jacket Mix Valve blends hot and cold to hold the setpoint precisely, since overheating burns flavour and underheating leaves the butter too stiff to coat. Temperature probes read both the jacket and the mass.

Flavour development depends as much on the Aeration System as on the mechanics. A Air Blower pushes warm dry air, conditioned by the Inlet Air Heater and Inlet Air Filter, through Air Nozzle nozzles across the chocolate surface. This air carries away moisture and volatile acids, chiefly acetic acid, which the Exhaust Hood extracts. A humidity sensor on the exhaust tracks how much moisture is leaving, which tells the operator when the mass has dried to its target. Removing this moisture also lowers the chocolate's viscosity, so it later flows and moulds well.

Charging and discharge

Ingredients enter through the Charging System system. Powders are metered from the Charge Hopper by a Dosing Screw, molten cocoa butter is added by the Cocoa Butter Pump, and a Load Cell weighs the batch so each charge matches the recipe. The cocoa butter is usually held back and added in stages, since adding it late keeps the mass dry and gritty during the early dry-conching phase where most of the flavour work happens, then thins it for finishing. When the cycle is complete, the Discharge System system empties the trough: a heated Discharge Pump lobe pump moves the viscous chocolate through a jacketed Discharge Pipe and a Mass Strainer to storage or directly to a tempering machine.

Control, variants, and use

The Control Panel runs the recipe through a PLC Module and HMI Touchscreen, stepping through dry, pasty, and liquid phases with set temperatures, rotor speeds, and aeration rates, and logging the full batch history for quality records. Conches come as longitudinal machines for traditional long conching, as rotary or drum conches for shorter cycles, and as continuous conches that feed and discharge without stopping for very large plants. Chocolate makers, from craft producers to industrial confectioners, use them to set the final flavour and texture; the recipe time and temperature are the main levers a maker uses to give a chocolate its character.
