Overview

A gummy production line makes gelatin or pectin confections by casting a warm, fluid blend into molds printed in corn starch, curing the pieces until they set, then demolding and finishing them. The starch mogul at the center of the line is one of the oldest pieces of confectionery machinery still in wide use, because powdered starch makes a cheap, breathable mold that wicks moisture out of the gummy as it cures. The line spans a syrup kitchen, a gelling system, the mogul itself, inline color and flavor dosing, a curing room, and a finishing drum, all tied together by a Line Control System. It handles classic gelatin bears and worms, pectin fruit jellies, and firmer wine gums on the same equipment with recipe changes.

The syrup kitchen

Production starts at the Syrup Kitchen. Sugar and glucose syrup are dissolved in the jacketed Dissolving Vessel, then pumped through a Cooking Coil that raises the slurry to 75-80 percent solids. Cooking to high solids is what lets the finished gummy hold its shape and resist sticking, but it has to be done without scorching, so the coil heats a moving film rather than a static mass. The cooked slurry is held in a jacketed Buffer Tank at 105-115 C, ready for blending. Sanitary Transfer Pump units move the viscous slurry between stages, since gravity feed alone cannot handle a syrup this thick.

Gelling and deaeration

Texture comes from the Gelatin Dosing System. Gelatin, pectin, or agar is hydrated in a steam-jacketed Gelatin Melter to a smooth, lump-free solution, then a Gel Dosing Pump meters it into the slurry stream at the recipe ratio. The two streams combine in a low-shear Inline Blender sized to mix without whipping in air, because gelatin foams easily. The blend then passes through a Vacuum Deaerator that pulls out entrained air, the step that gives the finished gummy its clear, glassy body instead of a cloudy, bubbled one. Pectin recipes also need precise acid timing, since pectin sets on contact with acid, so the acid dose is held back until just before depositing.

Color, flavor, and depositing

Color, citric acid, and flavor are added at the Color and Flavor Station right before the mogul. Liquid additives sit in heated Additive Tank, and Additive Dosing Pump inject them through a Static Mixer so a single cooked batch can be split into several colors and flavors on the fly. Adding these heat-sensitive components last protects them from the cook and makes flavor changes quick.

The blend then reaches the Starch Mogul. A Tray Stacker feeds empty trays to the Starch Buck, which fills them with corn starch and levels the surface. A carved Printer Board presses cavity impressions of the candy shape into the starch, and the Mogul Depositor fills each printed cavity. Inside the depositor a Deposit Piston Bank bank meters 2-8 g per cavity through a heated Nozzle Plate that keeps the blend fluid right up to the moment it drops into the starch. Filled trays leave the mogul and go to curing.

Curing, demolding, and finishing

Filled trays move on Curing Tray Rack into the Curing Room, a sealed space built from insulated Insulated Room Panel and held at 25-30 C by an Air Handler working with a Dehumidifier. Over 24-72 hours the starch wicks moisture out of the gummies until they reach a water activity of 0.55-0.65, firm enough to handle and stable on the shelf. Curing time is the slowest step in the whole line and usually sets the plant's true output.

Cured trays return to the mogul's Demolding Screen, a vibrating screen that tips the gummies out and separates them from the starch, while the Starch Reclaim Unit unit sieves, dries, and recirculates the corn starch back to the buck. The bare gummies still carry a starch dusting, so they pass to the Oiling and Polishing Drum. A Starch Air Knife air knife strips residual starch, then the Tumble Drum tumbles the pieces while an Oil Sprayer applies a thin film of release oil or carnauba wax. The finished gummies leave with a clean, glossy surface and no sticking.

Materials and hygiene

Wetted parts are 304 and 316 stainless steel for clean-in-place and for handling hot, acidic syrups. Cook coils, melters, and depositors are held at temperature by zone-controlled Heating Element units, and process pressures are watched by a Pressure Sensor on the steam and vacuum lines. Drive shafts run on sealed Ball Bearing units, the oiling drum is turned by a Drive Belt, and process joints are sealed with an O-Ring Set. The starch loop is enclosed and the reclaim system filtered, since airborne starch is both a sanitation and a dust-explosion concern.

Variants and use

Recipe and gelling agent drive the configuration. A gelatin line runs warmer and cures faster, a pectin line adds an acid-injection loop and tighter timing, and a foam or marshmallow line adds an aerator ahead of the depositor. Sanded sour gummies pass through a sugar-acid coating drum instead of the oiling drum. Throughput scales with mogul width and tray rate, but real output is governed by curing room capacity, so plants size the room to the mogul. Recipes loaded from the HMI on the control system store cook solids, gel ratios, additive doses, and curing setpoints, letting the line reproduce a product batch to batch with minimal operator judgment.
