Sausage Linking Machine

A sausage linking machine turns a continuous column of filled casing into a string of uniform, separated links. It sits downstream of a vacuum filler or stuffer: the filler pushes seasoned meat emulsion through a horn into the casing, and the linker grips, advances, and twists that filled tube into portions of equal length and weight. The result is the familiar string of links joined by twisted casing necks, ready to be hung, cooked, or packed.
The machine coordinates two motions in time. The Length and Portion Drive pulls a measured length of filled casing forward, then the Twisting Head Assembly grips the casing and spins it a set number of turns to form a sealed neck between links. Repeating this cycle hundreds of times a minute produces a continuous, evenly portioned strand. Everything that touches product is 316L or 304 stainless or food-grade polymer, and the whole frame is built for daily wash-down.
How it works
Filled casing enters through the Infeed and Filling Tube Unit. The emulsion arrives from the stuffer through the Sanitary Infeed Coupling and flows through the Filling Tube (Stuffing Horn), the polished horn the casing is gathered onto. A Casing Brake Ring grips the casing as it pays off the horn and holds back-pressure, which is what fixes fill density: too little brake and the casing under-fills, too much and it bursts. The operator sets that force with the Brake Tension Adjuster.
Once filled, the casing is gripped by the Transport Roller Pair, a pair of opposed rubber-faced drums that advance it the programmed link length. The Length Drive Servo Motor drives those rollers through the Transport Roller Gearbox, and a Length Measuring Encoder on a follower wheel measures actual advance so the controller can correct for casing stretch. Because length is metered, not timed, link length stays constant even as line speed changes.
When the casing has advanced one link, the transport pauses and the twisting head acts. This is the core of the machine.
Twisting head
The Twisting Head Assembly forms the neck between two links. The filled casing runs through the bore of the Rotating Twist Tube, a hollow shaft carried on Ball Bearing journals and sealed against wash-down by Oil Seal elements. At the link boundary the Gripper / Twist Chuck closes: a Chuck Pneumatic Actuator drives the Chuck Closing Cam, which clamps the profiled Pinch Chuck Jaw onto the casing. Pinching first is what makes the twist form a tight, sealed neck instead of spreading along the strand.
With the casing pinched, the Twist Drive Servo Motor spins the rotating tube through the Twist Head Gearbox a programmed number of turns, commonly two to four, twisting the casing closed. The servo carries a Servo Holding Brake so it holds twist position exactly between cycles. Adjacent links are usually twisted in opposite directions so the string holds together and does not unwind. The number of turns, the pinch timing, and the twist direction are all recipe parameters, which is how one machine handles thin breakfast links and thick bratwurst with only a horn and caliber change.
Length and portion drive
Link length and weight come from the portion drive working with the twist head. The Transport Roller Pair meter casing by distance, driven through a Drive Belt from the Length Drive Servo Motor. Nip-pressure springs hold the Transport Roller Drum pair firmly enough to grip the slippery casing without bruising the emulsion underneath. Because the drive is servo-controlled and closed-loop on the encoder, portion accuracy stays within one to two percent link to link, which matters when links are sold by count at a target pack weight.
Casing supply feeds this whole chain. The Casing Holder and Sock Pump holds a shirred casing stick in its Casing Stick Holder, and the Casing Sock Brine Pump draws brine from the Casing Brine Tank and wets the casing through the Casing Wetting Nozzle set. Brine keeps natural casings supple so they slide onto the horn and twist without tearing.
Discharge
After twisting, the finished strand leaves on the Discharge Conveyor. A food-grade Conveyor Belt runs over crowned Conveyor Roller rollers, driven by the Conveyor Drive Gearmotor through a Drive Belt. Belt speed is synced to link output so links lay down evenly without piling at the head or stretching the strand. From here the string goes to a hanging hook for smoking, to a tray for cooking, or to a downstream weigher and packer. Lines that need a closed end instead of an open twist add the Clipping / Thread Tying Attachment, where the Clip Punch drives an aluminum clip from the Clip Coil Feeder over the casing against the Clip Closing Die.
Materials and hygiene
A linking machine works with raw, salty, fatty product, so hygiene is built into the structure. The Frame and Cabinet is a welded 304 stainless Base Frame with sloped surfaces that shed water, clad in Sheet Metal Panel panels and standing on Sanitary Leveling Foot hygienic feet. A sloped Drip / Trim Tray collects wash-down water and casing trim to a drain. Electrical parts live behind the gasketed Control Cabinet, rated IP66, so the machine takes a full hose-down between batches. Contact parts such as the horn, chuck jaws, and rollers detach without tools for cleaning.
Use and maintenance
Operation centers on the Control System. The operator picks a recipe on the Operator Touchscreen (HMI): caliber, link length, twist count, and batch size. The PLC Controller sequences the cycle and commands the Servo Drive units, while the Process Sensor Set watches for trouble. A Casing Presence Sensor stops the machine when the casing breaks or the stick runs out, so it never twists empty, and a Pressure Sensor confirms air supply before the pneumatic chuck and clip cylinders fire.
Routine maintenance is light. The Pinch Chuck Jaw and the Brake Contact Ring wear as consumables and are swapped on a schedule. Bearings and seals in the twist head are sealed and last for years of wet service. Operators check brake tension and roller nip pressure at startup, since those two settings drive fill density and portion weight more than anything else on the machine.
