Yogurt Production Line

A yogurt production line turns raw milk into cultured, packed yogurt through a fixed sequence of preparation, heat treatment, fermentation, cooling and filling. Milk is first standardized for fat and solids, then homogenized and pasteurized to kill spoilage organisms and to denature the whey proteins so the finished gel is firm. The treated mix is cooled to incubation temperature, inoculated with a live starter culture, and held at about 43 C while the bacteria ferment lactose into lactic acid. As acid builds, the milk proteins coagulate into the smooth gel that defines yogurt. The product is then cooled to stop fermentation and filled into retail packs.
The line is built from linked stages: Mix Preparation builds the base, the Homogenizer and Pasteurizer condition it, the Fermentation Tanks tanks culture it, the Smoothing and Cooling sets the final body, and the Cup Filler packs it. A CIP Skid skid cleans the whole path between runs and a Control System system sequences every step and logs the food-safety record.
Mix preparation
A consistent base is what makes a consistent product. The Blend Tank receives standardized milk, and the Powder Funnel draws skim-milk powder and stabilizer into the stream to raise total solids, which thickens the body and reduces whey separation. A Shear Mixer with its Rotor-Stator Head head disperses the powder and hydrates the stabilizer so there are no lumps. Sugar syrup, color and other additives are metered in by Dosing Pump units, and three Weigh Cell sensors weigh the batch so each recipe is built to the same mass. Getting solids and fat right at this stage fixes the texture downstream.
Homogenizing and pasteurizing
The Homogenizer forces the warm mix through a narrow gap in its Homogenizing Valve at 150 to 200 bar, which shears the fat globules down below two microns so cream cannot rise and the mouthfeel stays even. Pressure comes from a Plunger Pump driven through the Drive Unit, with hard Ceramic Plunger elements and a heavy Crankshaft to take the load. The mix then enters the Pasteurizer, a Plate Pack of gasketed Heat Plate elements that heats it to about 90 C, with a Holding Tube sized so the mix stays hot long enough to be safe. A Diversion Valve valve sends any under-temperature mix back to be reprocessed, which is the legal proof that every drop was treated.
Fermentation
After cooling to incubation temperature the mix flows into the Fermentation Tanks bank. Each Fermentation Tank is an insulated, jacketed vessel that holds a batch at a steady 43 C using its Heating Jacket. The Culture Doser injects the live starter, a blend of Streptococcus thermophilus and Lactobacillus bulgaricus that work together to acidify the milk. A pH Probe watches the drop toward pH 4.6, the point where the casein proteins coagulate into a gel. For stirred styles a slow Tank Agitator keeps the batch uniform without tearing the set curd. The whole vessel is washed by a CIP Spray Ball between batches.
Smoothing, cooling and packing
Once the target acidity is reached, fermentation must be stopped quickly. The Smoothing and Cooling stage pulls the set yogurt with a gentle PD Pump so the gel is not thinned, shears it to a controlled body through the Smoothing Valve, and chills it in the Tubular Cooler to around 20 C. A Fruit Doser blends in fruit preparations for flavored variants. The chilled product reaches the Cup Filler, where a Cup Denester feeds empty cups, eight Fill Nozzle heads dose exact volumes, the Lid Sealer bonds a printed foil lid, and the Date Coder prints batch and date codes before the packs leave on the Index Conveyor.
Cleaning and control
Dairy plant hygiene is non-negotiable, so the CIP Skid skid circulates hot caustic, acid and rinse water through every wetted surface. Its CIP Pump drives flow fast enough to scour pipe walls turbulently, the CIP Heater warms the caustic, and a Conductivity Sensor sensor confirms each solution and detects the rinse-water break so cleaning chemicals never reach product. Over the top of everything sits the Control System system. Its PLC runs the recipes, holds the temperatures, and logs the pasteurization record that proves the line met its safety limits, which is the documentation a dairy needs for every batch it ships.
Variants and use
Two broad styles run on similar equipment. Set yogurt ferments in the retail cup itself, so the gel is never disturbed and the body is firm, while stirred and drinking styles ferment in the Fermentation Tanks tanks and are smoothed and pumped before filling, which is the path this line follows. Fat content is set in Mix Preparation and ranges from non-fat to full cream, and Greek-style products add a separator or membrane step after fermentation to concentrate the solids. The same backbone of preparation, heat treatment, controlled incubation and cold packing applies across all of them, with the recipe and a few added units deciding the final product.
