An industrial dough mixer develops bread and bakery dough by working a measured batch of flour, water, yeast, and other ingredients until the gluten forms an elastic, extensible network. Mixing is not just blending; it is the mechanical step that builds the structure the dough needs to trap gas and hold its shape through fermentation and baking. The spiral mixer described here is the workhorse of medium and large bakeries: a fixed Spiral Hook works the dough while the Mixing Bowl rotates beneath it, so the whole batch passes through the most intense mixing zone many times per minute. A batch of 60 to 220 kg is mixed, checked, and discharged in minutes, then sent on to a divider and rounder.
The machine combines a rotating bowl, a driven hook, and the means to control the most important output, dough temperature. The Agitator and Hook develops the dough, the Agitator Drive turns the hook at two speeds, the Bowl Rotation Drive turns the bowl, the Bowl Cooling Jacket removes friction heat, the Bowl Tilt Mechanism discharges the batch, and the Control System runs the program.
The bowl and hook
The heart of the mixer is the pairing of a rotating bowl and a fixed spiral hook. The Mixing Bowl is a deep stainless Bowl Shell riding on a geared Bowl Drive Ring so it can be turned slowly. The Agitator and Hook carries a stainless Spiral Hook shaped as a spiral, and a fixed Center Breaker Bar divides the dough so the hook works it in two streams. As the bowl rotates, every part of the batch is repeatedly lifted, stretched, and folded by the hook. Fixed Bowl Scraper blades wipe dough off the wall so none is left behind. On many machines the bowl sits on a Bowl Trolley and lifts out, letting one mixer head serve several bowls.
Two-speed development
Dough is mixed in two stages, and the Agitator Drive provides two speeds for them. A slow first speed blends the ingredients and hydrates the flour without tearing the forming gluten. A faster second speed then develops the dough, building the gluten network to full strength. The drive uses a pole-changing Two-Speed Motor of 7.5 to 30 kW through a reducer. The Bowl Rotation Drive turns the bowl with its own geared Bowl Drive Motor, independent of the hook, so the two speeds can be tuned to each other. Mixing too little leaves the dough weak; mixing too much breaks the gluten down again, so the end point matters and is watched closely.
Temperature control
The single most important number a baker controls at the mixer is the final dough temperature, usually held near 24 to 26 C, because it sets how fast the dough will ferment afterward. Mixing adds heat through friction, and a large batch heats up quickly. The Bowl Cooling Jacket removes that heat with chilled water flowing through a Jacket Shell around the bowl. A Chiller Valve modulates the flow to hold the target, and a Dough Temperature Probe in the Control System tells the program when the dough has reached temperature. Bakeries also adjust water temperature and add ice to hit the target in summer.
Discharge
When the dough is ready it must come out cleanly without being torn or warmed by handling. The Bowl Tilt Mechanism mechanism lifts and tips the bowl so the batch slides out into a trough or onto a conveyor. A Tilt Cylinder cylinder fed by a Hydraulic Power Unit hydraulic unit swings the bowl on its Tilt Pivot. On removable-bowl machines the bowl is instead rolled away on its trolley and tipped at a separate hoist, but the tilt mechanism is common on fixed-bowl mixers running back-to-back batches.
Control and construction
The Control System runs the mixer by recipe. A PLC Controller holds programs that mix for a set time or, more precisely, until a set amount of energy has gone into the dough, measured through the Motor Drive (VFD) drive that reports motor power. An Operator Panel (HMI) panel lets the operator select a recipe and watch temperature and time. Because the machine handles food, it is built entirely from stainless steel for washdown. The Frame and Guarding carries the heavy mixing loads on a welded Base Frame, and a Bowl Guard with Guard Interlock interlocks keeps hands away from the hook while it runs.
Place in the bakery
The spiral mixer sits at the front of the bread line. It receives weighed ingredients, develops the dough, controls its temperature, and discharges it to the next stage, which is usually a divider that portions the dough and then a rounder that shapes the pieces. Mixer capacity sets the rhythm of the whole line: batch size and mix time decide how much dough reaches the oven each hour. Getting development and temperature right here is what lets every downstream machine work with consistent dough, which is why the mixer is specified and operated with care.
