Brine Chilling System

A Brine Chilling System lowers the temperature of food product fast by moving it through a bath of cold salt or glycol brine. Brine stays liquid well below the freezing point of water, so the bath can sit at -8 to -2 C and pull heat out of product much faster than a cold air blast at the same temperature. The high heat capacity and direct contact of the liquid give a heat transfer coefficient several times that of forced air, which shortens chilling time and reduces weight loss from evaporation.
Typical users are poultry plants chilling carcasses, fish processors firming fillets, cheese makers cooling brined blocks, and ready-meal lines pulling cooked product through the safe temperature band quickly. The system has two refrigeration circuits in series: a mechanical refrigeration plant that chills the brine, and a brine loop that carries that cold to the product bath. Splitting the duty this way keeps the refrigerant charge small and contained inside the machine room while the food-contact side runs on a benign, food-safe brine.
How it works
Product enters the open bath and is carried through it by the Submerged Conveyor or loaded into perforated Immersion Basket units. Cold brine circulates continuously over and around the product. The brine warms as it absorbs heat, returns to the Brine Storage Tank, and is pumped back through the Brine Cooler (Evaporator) where the refrigeration plant chills it again. The Tank Agitator keeps the tank stirred so salt concentration and temperature stay uniform and no warm pockets form.
The chilling rate is set by brine temperature, brine flow, and dwell time in the bath. Conveyor speed sets dwell time, and the operator dials it in through the recipe screen on the Operator Touchscreen. Counterflow layout, where the coldest brine meets product just before it exits, gives the steepest final temperature drop.
Refrigeration loop
The refrigeration side is a standard vapour-compression circuit. The Refrigeration Compressor draws low-pressure refrigerant vapour and compresses it. Hot gas passes to the Air-Cooled Condenser, an air-cooled finned coil with two axial fans, where it rejects heat and condenses to liquid. Liquid collects in the Liquid Receiver, passes through the Filter Drier, and reaches the Thermostatic Expansion Valve. The valve drops the pressure, and the cold refrigerant boils inside the Brine Cooler (Evaporator), absorbing heat from the brine flowing over the shell side. A Suction Accumulator sits on the suction line to stop liquid refrigerant slugging back to the compressor on start-up or under light load.
The compressor crankshaft turns on two Ball Bearing units, and the compressor is driven by its own integral motor built from a Stator Assembly and Rotor Assembly. Refrigerant high and low side pressures are read by Pressure Sensor units feeding the controller, which trips the plant on out-of-range pressure.
Brine circulation
The brine loop is all food-grade. The Brine Circulation Pump is a close-coupled centrifugal pump with a 316 stainless casing and impeller, sealed by a mechanical Oil Seal and a set of O-Ring Set gaskets. It pushes brine through the Brine Basket Strainer basket strainer, which catches scale and product debris before they reach the heat exchanger or the bath. Cold is delivered to the bath either directly or through the Immersion Plate Exchanger plate exchanger when the process needs the bath brine kept separate from the cooling brine.
Holding the brine at the right concentration matters. As product carries brine out and condensation dilutes the bath, the Brine Dosing Unit meters in fresh salt or glycol solution to hold the freezing point and the chilling rate steady. Brine temperature at two points and the tank level are tracked by the Instrumentation Set.
Materials and construction
Everything that touches product or brine is 316 stainless steel, chosen for its resistance to chloride pitting from salt brine. The Product Bath Tank, the storage tank, the pump wetted parts, the conveyor belt, and the baskets are all 316. The base Base Frame and external cladding use 304 stainless, which is acceptable away from direct brine contact. Tanks and the brine cooler are insulated with polyurethane or closed-cell foam to cut heat gain and stop condensation dripping onto the floor.
The build follows hygienic design rules: continuous welds ground smooth, sloped surfaces that self-drain, no flat ledges that pool brine, and Levelling Foot supports that lift the frame clear for wash-down. The whole machine is rated for daily caustic and sanitiser cleaning.
Variants and controls
Capacity is set by compressor and brine-cooler size, from compact 40 kW units for small fish lines up to 250 kW plants for high-volume poultry chilling. Ammonia is used on larger installations where it sits inside a packaged machine room; smaller plug-and-play units run on R-449A. The Electrical Control Panel holds the PLC, the operator screen, and two variable-frequency drives that trim pump and conveyor speed to the load, which saves energy at part throughput.
Use and maintenance
Daily work is cleaning, checking brine concentration with a refractometer, and topping up the dosing tank. The basket strainer is rinsed each shift. Weekly checks cover refrigerant sight glass clarity, condenser fin cleanliness, and pump seal condition. Brine is tested for bacterial load and replaced on a schedule, since salt brine can harbour halophilic organisms if neglected. Pump and motor bearings are greased on the maker's interval, and the conveyor belt tracking is checked so it does not chew the frame.
