French Fry Production Line

A french fry production line converts raw potatoes into frozen, par-fried strips that a restaurant or home cook finishes in their own fryer or oven. Unlike a chip line, it does not cook the product through: it blanches and par-fries the strips just enough to set color and a thin crust, then freezes them individually so the final fry happens later. The line is large, often sixty to a hundred metres long, and runs from steam peeling through cutting, blanching, drying, par-frying, and freezing, with grading along the way and a Line Control System tying the stages together. The targets are uniform strip size, even color, and a fry that comes out crisp outside and fluffy inside after the final cook.
Peeling and inspection
Raw potatoes enter the Steam Peeler and Washer. A pressure Steam Peeling Vessel blasts them with steam at 8-15 bar for a few seconds, flash-cooking a thin skin layer so it lifts cleanly, then a Brush Washer scrubs the loosened skin away with water sprays. Steam peeling removes very little flesh, which matters because yield is everything in fry production. A water-flotation Destoner pulls out stones and clods that would damage the cutter, and an Inspection Belt gives operators a chance to remove rotten or green potatoes by hand.
Cutting
Peeled potatoes go to the Hydraulic Cutter, which uses water-knife cutting rather than mechanical pushing. A high-flow Hydraulic Transport Pump carries each potato in a fast water stream through an Accelerator Tube that centers and speeds it, then drives it straight through a fixed Knife Block grid. Cutting at high velocity through stationary blades gives clean, straight strips with smooth faces, which fry more evenly than torn ones. The grid sets the cross-section, and crinkle blades make ridged fries. A Sliver Remover screens out slivers, nubbins, and short pieces so only full strips continue.
Blanching and color control
The strips pass into the Hot-Water Blancher. A submerged Blancher Conveyor carries them through hot water in the Blancher Tank held at 70-95 C by a Blanch Water Heater. Blanching does several jobs at once: it inactivates enzymes that would brown the strips, it leaches out reducing sugars that cause uneven dark frying, and it sets a uniform texture from surface to core. A Color Control Doser doser adds dextrose where more color is wanted or sodium acid pyrophosphate to inhibit after-cooking darkening. Getting the blanch right is what gives every strip the same golden color after the consumer's final fry, despite variation in the incoming crop.
Drying and par-frying
Blanched strips carry a lot of surface water, which would cool the oil and cause splatter, so they go through the Surface Dryer. A perforated Dryer Belt moves them under Dryer Fan and a Dryer Heater inside an enclosure of insulated Insulated Dryer Panel, removing surface moisture and controlling how much oil the strips pick up in the fryer. The strips then reach the Continuous Par-Fryer. They ride submerged on the Submerging Conveyor through oil held at 170-185 C in the Par-Fryer Oil Pan for 40-90 seconds, long enough to set a thin crust and color but not to cook the inside. Oil is circulated by the Oil Circulation Pump through an external Oil Heat Exchanger and a continuous Continuous Oil Filter that removes fines so the oil stays clean over long runs.
Freezing
Par-fried strips go straight to the Fluidized-Bed Freezer, a fluidized-bed IQF tunnel. Cold air at around minus 35 C is forced upward through a perforated Fluidizing Bed by Freezer Fan, lifting and separating the strips so each one freezes individually instead of clumping into a block. The cold air is supplied by Freezer Evaporator coils fed from an ammonia or CO2 Refrigeration Pack, all enclosed in thick insulated Insulated Freezer Panel. Individual quick freezing is what lets the finished bag pour out as loose fries rather than a frozen mass.
Grading, conveying, and control
Defective and off-size strips are removed by the Product Conveying and Grading section. Vibratory Shaker Conveyor units dewater and move the strips, a camera-and-air-jet Optical Grader ejects dark ends, defects, and foreign material, and a Length Grader sorts the rest into length grades for packing. The Line Control System runs the whole sequence, watching the steam vessel and oil loop with a Pressure Sensor on each, holding blanch and fryer temperatures within a degree through its temperature controllers, and switching heaters and pumps through a bank of Relay outputs powered from a 24 V Power Supply.
Materials and use
Product-contact parts are 304 and 316 stainless steel for steam, hot water, hot oil, and sub-zero air. Dryer, fryer, and blancher heating uses zone-controlled Heating Element interfaces or steam coils, and conveyors and dryer belts are turned by toothed Drive Belt drives running on sealed bearings. Line size is set by raw potato feed, from a mid-size plant at 5 tonnes per hour to a large plant above 25 tonnes per hour using the same stage layout at greater width. Coated and battered fries add a batter enrober and a second par-fry before freezing, and wedge or formed products change only the cutter and grading. Recipes loaded from the HMI store cut size, blanch profile, par-fry time, and freezer setpoints so a product reproduces day to day with little operator judgment.
