Overview

A plate pasteurizer is a high-temperature short-time (HTST) skid built around a gasketed plate heat exchanger. It takes raw liquid food, typically milk, cream, juice, beer wort, or liquid egg, raises it to a defined pasteurization temperature, holds it there for a fixed time, then cools it back down, all in a continuous flow. The core of the machine is the Plate Pack and Frame, a stack of thin pressed Regeneration Plate sheets clamped between a fixed end plate and a movable pressure plate. Hot and cold streams flow through alternating channels separated by stainless plates roughly 0.5 mm thick, so heat crosses the metal while the fluids never mix.

The design point for milk is 72 °C for 15 seconds, the legal HTST minimum in many markets, though juice, egg, and extended-shelf-life products run hotter or longer. The skid carries everything needed to run that cycle as one transportable unit: feed pumps, a hot water set, a cooling set, a holding tube, a safety diversion valve, controls, and clean-in-place connections mounted on a stainless frame.

How the HTST cycle works

Product enters the Balance Tank, a constant-level tank that decouples the upstream supply from the precise timed flow the process needs. The Feed Pump and a timing pump draw from the tank and push product through the regeneration section first. There the cold incoming product is warmed by the already-pasteurized hot product flowing the other way, which recovers 90 to 95 percent of the heat and cuts steam and refrigeration load sharply.

Partly warmed product then passes into the heating section, where the hot water loop brings it to the pasteurization setpoint. From the heating section the product flows into the Holding Tube, a length of sloped tube sized so the fastest particle of fluid still spends at least the required time at temperature. After the tube, the hot product returns through the regeneration section to give up its heat to incoming product, then through the cooling section where chilled water drops it to packing temperature, often 4 °C or lower.

Plate pack and frame

The plate stack hangs from an upper Carrying Bar and is aligned at the bottom by a Guide Bar. Six or more Tightening Bolt tie rods compress the pack between the Fixed End Plate and the Movable Pressure Plate down to a stamped target dimension printed on the plates. Each plate carries a Plate Gasket that seals its channel and steers flow to the correct ports, so the same frame can be partitioned into regeneration, heating, and cooling sections by the plate and gasket arrangement.

Plates are 316L stainless, pressed with a chevron herringbone pattern that creates turbulence at low flow and supports the plates against differential pressure. Gaskets are the main wear item: NBR for product and water duties, EPDM where hot water or CIP chemicals contact the seal. The pack can be opened, plates inspected and reordered, and capacity changed by adding or removing plates within the frame length.

Heating, cooling, and regeneration sections

The heating section is fed by the Hot Water Set, a closed water loop heated by a Steam Injector rather than direct steam on the product. A modulating steam valve trims the loop to hold the product setpoint within a fraction of a degree. The hot water side is deliberately held at lower pressure than the product side so that any plate pinhole leaks toward the heating medium, not into the product, and a differential Pressure Sensor proves that pressure relationship continuously.

The cooling section runs on chilled water or glycol from the Cooling Set, pulling the pasteurized product down to storage temperature. Regeneration sits between the two and does most of the thermal work for free, which is why regeneration efficiency is the headline number on these machines.

Holding tube and flow diversion

The Holding Tube is the legally critical part. Its length and the timing pump speed together fix the residence time, and it slopes upward so it cannot trap air or drain. An Outlet RTD at the tube exit reads the temperature that the safety logic acts on, and a separate recording RTD logs it for the regulator.

If the product at the tube outlet falls below the setpoint, the Flow-Diversion Valve diverts the underprocessed flow back to the balance tank instead of forward to filling. The diversion valve uses a spring-return Diversion Valve Actuator that fails to divert on loss of air, power, or signal, and position switches prove the seat. The Control Panel reads the RTDs through its input card, runs the diversion logic in the PLC, and keeps a tamper-resistant record.

Materials and sanitation

All product-contact metal is 316L stainless with surface finishes below 0.8 micron Ra to resist soil and support cleaning. The whole circuit is designed for clean-in-place: the CIP and Sanitary Connections recirculates caustic and acid solutions through the same path the product takes, with sanitary tri-clamp connections and o-rings throughout. Gasket compounds, port liners, and seals are food-grade and traceable. The skid is built to 3-A and EHEDG hygienic practice, with self-draining slopes, no dead legs, and crevice-free joints.

Variants and use

Dairies run plate pasteurizers as the workhorse before separation, standardization, and filling. Juice and beverage plants run hotter setpoints and longer holds for low-pH products. Breweries use the same skid layout for wort cooling and for tunnel-free flash pasteurization of finished beer. Liquid egg and some pharmaceutical fluids use plate pasteurizers with tighter temperature control. Capacity is scaled by plate count and pump sizing, so a single frame design covers a wide throughput band by changing the plate pack inside it.
