Overview
A tempering machine melts chocolate and walks it through a precise temperature curve so its cocoa butter sets in the one crystal form that gives a glossy, snappy result. The Melting Bowl melts the charge in a water jacket; the Archimedean Screw keeps the mass folded and even; the Circulating Pump circulates it past the Thermal Zones that cool then gently reheat it; and the Temperature Sensing feed temperatures back to the Control System. A Vibrating Table settles filled moulds and an optional Enrobing Curtain coats centres, all on a stainless Frame & Panels.
How it works
Cocoa butter can set in several crystal forms, but only one — Form V — gives the shine, the clean snap and the resistance to bloom that finished chocolate needs. Tempering is the process of seeding that form and then melting out the others. The Melting Bowl first melts everything fully: its Heating Element warms the Water Jacket, spreading heat gently so the chocolate never scorches, with a Thermal Fuse guarding against runaway heat. The Archimedean Screw lifts chocolate from the bottom and pours it back over the top, keeping the whole mass at one temperature.
The Circulating Pump then circulates chocolate across the Thermal Zones. There it flows over the Cooling Wall, chilled by Peltier Thermoelectric Module coolers, which drops it far enough to nucleate Form V crystals; a Reheat Element immediately nudges it back up so the unstable crystals melt away and only the good seed remains. The Temperature Sensing watch the bowl, wall and outlet so the Control System can hold this curve to a fraction of a degree — the whole result hinges on temperature precision. Tempered chocolate goes to moulds settled on the Vibrating Table, whose Vibration Motor shakes out air bubbles for a smooth face, or through the Enrobing Curtain, where a falling sheet from the Curtain Trough coats centres riding the Wire Belt.
