A dough rounding machine takes the rough, irregular pieces that come off a divider and rolls each one into a smooth, taut ball. Rounding is more than cosmetic: it forms a continuous skin over the cut surfaces, which seals in the gas and gives the piece a tight outer membrane that holds its shape through the next stages of proofing and molding. A well-rounded piece relaxes evenly and bakes into a regular loaf or roll, while a poorly rounded one stays lumpy and proofs unevenly. The conical rounder described here is the common type: a rotating cone drags each piece up a fixed spiral track, and the rolling action between cone and track shapes the ball.

The machine is simple in principle and depends on a few surfaces working together. The Rounding Cone turns, the Spiral Track stays fixed, and a piece dropped between them is rolled into a ball as it travels upward. The Infeed Chute times pieces onto the track, the Flour Duster and Air Blow System systems stop sticking, the Drive System turns the cone, and the Control System sets the speeds and temperatures.

The cone and track

Rounding happens in the gap between two surfaces. The Rounding Cone is a Cone Body of aluminium or stainless steel turning on a Cone Shaft, carrying a food-grade Non-stick Coating so dough does not stick. Wrapped around it is the Spiral Track, a Helical Rail fixed by Track Bracket brackets at a set distance from the cone. As the cone turns, a piece caught between the moving cone surface and the fixed Track Liner is rolled over and over while it is dragged up the spiral, which tightens its skin. The Gap Adjuster sets the gap between cone and track, and that gap is the main control for piece size: a wider gap suits larger pieces, a narrower gap rounds small rolls tightly.

Infeed timing

Pieces must enter the track one at a time and at the right point in the cone's rotation. The Infeed Chute uses a sloped Infeed Chute Body to bring pieces from the divider, and a Timing Flap releases each one so it lands at the bottom of the spiral. Timing the drop keeps pieces evenly spaced up the track, so none catch up to another and stick together. A sensor confirms each piece has entered, letting the line above pace itself to the rounder.

Anti-stick: flour and warm air

Sticky dough is the enemy of rounding, and two systems fight it. The Flour Duster duster lays a thin film of flour on the cone and track with a Dusting Roller fed from a Flour Hopper, so the dough rolls rather than smears. Just as important is the Air Blow System system, which blows gently warmed air over the rolling pieces. A Air Blower moves the air, a Air Heater built around a Heating Element warms it, and Air Nozzle nozzles direct it along the track. The warm air dries the very surface of the dough into a light skin, which keeps the ball from sticking to itself or the machine and helps it release cleanly at the top. Too much air would dry and crack the skin, so the temperature is held modest by the Air Thermostat.

Drive and rounding intensity

How hard a piece is rounded depends on how fast the cone turns and how long the piece stays on the track. The Drive System uses a variable-speed Drive Motor through a reducer to turn the cone. Faster cone speed rounds more vigorously, which suits slack or wet dough that needs more skin tension, while slower speed is gentler on stiff or delicate dough. Matching cone speed to the dough and the piece size is the operator's main adjustment, and it is set on the Control System.

Control and construction

The Control System is modest because the machine is simple. A Controller coordinates cone speed through a Cone Drive (VFD) drive, sets the air temperature, and runs the duster, with a Operator Panel (HMI) panel for the operator. Like every machine in a bakery line, the rounder is built from stainless steel for washdown, carried on a welded Base Frame with Sheet Metal Panel guards, Guard Interlock interlocks, and Caster casters so it can be rolled out for cleaning. The non-stick surfaces and the track liner are cleaned often, since flour and dough build up there fastest.

Place in the line

The rounder sits directly after the divider and before the intermediate proofer. It receives divided pieces on its infeed, rounds them as they climb the spiral, and drops finished balls off its Outfeed Chute to the next stage. Because rounding sets the skin and shape that every later step builds on, a rounder that is set wrong shows up as misshapen loaves at the oven, so cone speed, gap, flour, and air are tuned together whenever the dough or the product changes. A compact conical rounder can keep pace with a high-speed divider while taking up little floor space, which is why it is the standard choice in bread and roll plants.
