Overview

A spiral cooling conveyor cools baked goods, snacks, and other warm products by carrying them along a long belt path coiled into a vertical helix. Instead of laying out a flat cooling conveyor 80 to 200 metres long, the belt is stacked into 12 to 40 spiral tiers around a central rotating drum, fitting the same path length into a footprint of a few square metres. Product loaded at the bottom rides the belt upward through tier after tier, spending 8 to 60 minutes in moving air before it reaches the top, by which time its core temperature has dropped enough for slicing, packaging, or further processing.

The machine matters because cooling is often the slowest step in a bakery line. Bread leaving the oven at 95 C cannot be sliced cleanly or wrapped without trapping condensation, and chocolate-coated products will smear until the coating sets. A continuous spiral keeps the line flowing at oven speed while giving each piece the residence time it needs. The Spiral Tower Assembly provides the path, the Spiral Belt Assembly carries the load, and the Airflow System removes the heat.

Spiral tower and belt drive

The heart of the machine is the Drum Drive Cage, a tall welded stainless drum fitted with vertical Cage Drive Bar members around its circumference. The inner edge of the belt presses against these bars, and as the drum rotates it drags the belt upward by friction. This self-stacking design means the belt is not pushed or pulled through fixed guides; it climbs the cage like a spring climbing a screw. Each spiral loop rests on a Tier Support Rail faced with a Rail Wear Strip of UHMW polyethylene that lowers friction and absorbs wear.

To keep the belt from over-tensioning against the cage, a separate overdrive on the return path runs slightly faster than the cage surface speed. The Overdrive Sprocket units and the Overdrive Motor pull belt off the top of the stack and feed it back to the bottom, so the cage only has to overcome friction, not the full belt weight. A Torque Limiter in the main drive line slips if the belt jams, protecting the gearbox and the belt itself.

The spiral belt

The Spiral Belt Assembly is the most specialised component. An ordinary conveyor belt cannot turn a tight radius and lie flat on the straights, so a spiral belt uses side-flexing links: the Belt Link Plate plates collapse on the inner edge as the belt curves around the cage and open out on the outer edge. The links are tied together by stainless Belt Cross Rod cross rods, and the carrying surface is an open Belt Mesh Band band that lets cooling air pass straight through the product layer. Reinforced Belt Edge Band bands take the drive load from the cage on the inner edge. A Belt Take-Up Unit unit keeps tension constant as the belt stretches over its service life.

Airflow and cooling

Cooling is driven by forced convection. Several axial Circulation Fan units, each turned by a washdown Fan Motor, pull air through the belt stack so it passes over every tier. Air enters through a Air Filter, is distributed by a Air Plenum and vertical Air Supply Duct runs, and is exhausted at the top carrying away heat and moisture. For faster cooling or for chocolate setting, an optional Cooling Coil chills the recirculated air to 5-15 C. Multiple temperature-probe sensors track air temperature at different heights so the controller can balance fan speed against product residence time.

The airflow pattern is usually counterflow: coolest air meets the product just before it discharges, while warmer, more humid air leaves near the infeed where the product is hottest. This keeps the temperature difference high along the whole path and avoids condensation on the cooled product near the top.

Infeed, outfeed, and enclosure

Product enters on the Infeed Conveyor conveyor, which meters and aligns pieces before a polished Transfer Dead Plate hands them onto the bottom spiral tier. After the climb, the Outfeed Conveyor conveyor takes cooled product off the top tier and carries it to the next process through a Discharge Chute. The whole tower sits inside a Hygienic Enclosure built from insulated Insulated Panel sections, with hinged Access Door panels and polycarbonate View Window sections for inspection. A sloped Drain Pan collects wash water during cleaning.

Control and cleaning

The Control Panel houses a PLC Module that coordinates belt speed, overdrive ratio, and fan speed through several Variable Frequency Drive inverters, with an HMI Touchscreen for recipe selection and alarms. Belt speed sets the dwell time, so the recipe for a dense rye loaf will run slower than one for light buns. Hygiene is built in: the CIP Wash System sprays detergent and rinse water through fixed nozzles onto the belt and enclosure while the belt runs at wash speed, so the interior can be cleaned without full disassembly. Stainless construction throughout, sloped surfaces, and EHEDG-style design let the machine meet bakery sanitation requirements.

Variants and use

Spiral coolers come in single-drum and double-drum layouts; double-drum machines split the path between two towers for very long dwell times. The same mechanical platform serves as a proofer or freezer simply by changing the air handling: warm humid air for proofing, cold air for freezing, ambient for cooling. Common users are industrial bakeries, snack and tortilla plants, ready-meal lines, and confectionery makers cooling enrobed products before wrapping. Sizing depends on throughput and the required temperature drop, which together fix the belt area and the air flow rate.
