Steam-Jacketed Kettle

A steam-jacketed kettle cooks liquid and semi-liquid foods by surrounding a stainless cooking bowl with a sealed steam space. Steam condenses against the outside of the inner bowl, giving up its latent heat to the food across the full curved surface rather than at a single hot spot. This is why jacketed kettles heat quickly and evenly and rarely scorch, which makes them the standard vessel for sauces, soups, stocks, gravies, custards, jams, and confectionery in commercial kitchens and food plants. The food never touches the steam; only the kettle wall transfers heat, so the product stays clean and the heat input is easy to control by adjusting steam pressure.
The two parts that define the kettle are the Cooking Vessel, the inner bowl that holds the food, and the Steam Jacket, the pressure shell that forms the steam space around it. The remaining systems regulate steam, tilt the kettle for pouring, and keep the operation safe.
Cooking vessel
The Cooking Vessel is a hemispherical Inner Bowl of 316L stainless steel. The round bottom has no corners where product can collect or burn, and it matches the way a paddle or scraper sweeps the surface. A reinforced Reinforced Rim Ring stiffens the open top and carries the cover hinges and the tilt trunnions. A Pour Lip shapes the stream when the kettle is tilted, and an optional Anti-Splash Baffle reduces splashing during vigorous boils.
Steam jacket
The Steam Jacket is a Jacket Pressure Shell welded around the lower portion of the bowl to form a closed annular space. Because steam in this space is under pressure, the jacket is a pressure vessel built and stamped to ASME Section VIII and fitted with a Safety Relief Valve. Steam enters through the Steam Inlet Port near the top of the jacket and condensate drains from the Condensate Outlet Port at the bottom. Outside the pressure shell, Jacket Insulation under a Outer Cladding skin reduces heat loss and protects operators. A two-thirds jacket covers the lower bowl for general cooking; a full jacket extends higher for products that need heat near the surface.
Steam control
The Steam Control group conditions the supply. A Steam Pressure Regulator drops plant steam to the kettle working pressure, a Modulating Control Valve modulates flow to hold the cook temperature, and a Y-Strainer keeps scale out of the valve. On the condensate side, a Steam Trap discharges condensate while holding back live steam, a Thermostatic Air Vent purges non-condensable gases that would otherwise blanket the bowl and slow heating, and a Vacuum Breaker admits air when the jacket cools so the cooling steam does not pull a vacuum and collapse or stress the shell.
Tilt mechanism
Most kettles pour by tilting. The Tilt Mechanism mounts the kettle on two Trunnion Pivot pivots and uses a Tilt Worm Gearbox worm drive turned by a Tilt Handwheel. The worm gear is self-locking, so the kettle holds any angle without slipping, and a Tilt Lock Pawl pawl secures it in the upright position. One trunnion is usually hollow to route steam and condensate through the pivot so the lines do not bind as the kettle rotates.
Cover, discharge, and control
A two-piece Hinged Cover with Cover Assist Spring assist lets one operator open the lid against its weight, and a Lid Vent Port lets steam escape during cooking. Product can leave either by tilting or through the Draw-Off Valve, a tangent draw-off valve set flush with the bowl bottom so the kettle empties completely; a Strainer Basket can catch solids when only the liquid is drawn. The Control Panel runs a PID Temperature Controller PID loop fed by a product Product RTD Probe probe, modulating the steam valve to hold setpoint and showing the reading on a Digital Display.
Materials and sanitation
The inner bowl and all product-contact parts are 316L stainless steel polished to 0.4 to 0.8 micron Ra, with sanitary welds and no crevices. The smooth hemisphere and the flush draw-off valve make the kettle easy to empty and clean, important for sauce and dairy work where burnt-on residue and bacterial growth are both concerns. The outer surfaces use 304 stainless steel for cost.
Variants and use
Kettles range from a 20-gallon countertop unit in a restaurant to a 500-gallon floor model in a soup plant, and come in tilting, stationary, and console styles. A plain jacketed kettle suits free-flowing products that circulate by natural convection; for viscous products that cling to the wall, a scraped-surface version adds a motor-driven scraper to keep heat transfer high and prevent scorching. The steam jacket itself is the same idea in both: gentle, surrounding heat that the operator controls by steam pressure.
