Cheese Brining System

Product

Overview

A cheese brining system salts fresh cheese by immersing it in a chilled, controlled-strength brine, the step that draws moisture from the curd, sets the rind, and seasons the cheese before aging. This is an integrated multi-tank installation with circulation, refrigeration, salinity control and filtration, so the brine stays at a stable strength, temperature and cleanliness as cheese passes through it. The Cheese Brining System holds cheese hoops in chilled brine for a defined dwell time while the supporting loops keep the brine consistent batch after batch. Brine consistency is what makes salting repeatable: drift in temperature or salt strength changes how fast salt enters the cheese and how much moisture leaves.

Brine Tanks

The Brine Tanks are an array of vertical vessels with corrosion resistance suited to saturated salt. Each Tank Vessel is an SS304 or high-density polyethylene tank of 500 to 2000 L holding brine and cheese. A Tank Cover lid with a latch and strainer support closes each tank. Brine enters through a sanitary Tank Inlet and leaves through a bottom Tank Outlet discharge valve used for draining and cleaning. The tanks stand on a welded Support Frame with adjustable legs and vibration isolation.

Circulation

The Circulation Pump keeps a steady brine flow through every tank so salt and temperature stay uniform and stagnant zones do not form. A three-phase Pump Motor with a soft-starter or VFD drives a rotary lobe or gear Pump Head. A double Pump Seal with a refrigerated barrier fluid stops corrosive brine from leaking past the shaft. A spring-loaded Pump Check Valve on the discharge prevents backflow, and an adjustable Pump Bypass Valve returns excess flow to suction to protect the pump and hold a stable circulation rate.

Refrigeration

Brine is held at 8 to 12 degC by the Chiller Unit. A hermetic Compressor rated for ammonia or HFC service pumps refrigerant around the loop. Heat is rejected at the Condenser, a Expansion Valve regulates refrigerant feed, and the Evaporator heat exchanger cools the circulating brine. A Receiver pressure vessel separates liquid and vapor refrigerant. Holding the brine cold both slows salt uptake to a controllable rate and suppresses spoilage organisms in a tank that runs for weeks.

Salinity Control

Cheese continuously draws salt out of the brine and adds water to it, so the brine weakens over time and must be corrected. The Salinity Control does this automatically. A Density Meter reads brine strength as a 4–20 mA signal. When strength falls, the controller draws concentrated salt solution from the Salt Hopper using a metering Salt Pump, blends it into the flow through a Mixing Chamber static mixer, and modulates the dose with a Solenoid Injector proportional valve. Closed-loop dosing holds the brine near saturation without manual sampling.

Filtration

The Filter Loop is an auxiliary path that keeps the brine clean. A Filter Pump circulates brine continuously through a Cartridge Filter with a 5 to 10 micron element that removes curd fines and fat. An optional UV Unit lamp in a quartz tube reduces pathogens, and a Filter Bypass relief valve protects the cartridge when it begins to clog. Continuous filtration is what lets a brine be reused for long periods instead of being dumped.

Drain Racks

Cheese is suspended in the brine on the Drain Racks, multi-tier platforms that hold the hoops. A welded Rack Frame carries perforated Shelf Levels shelves, and adjustable Hoop Holders cradle the cheese hoops at set spacing so brine reaches every surface. A Drain Manifold tray with air-vent ports directs draining whey to a common return line.

Automation

The whole system is run by the Automation block. A Automation PLC industrial controller manages pump speed, the chiller, salt injection and alarms. Dual RTD Temperature Sensor probes in the brine and return lines feed the temperature PID loop. The operator works from a colour Touch HMI for recipe storage, cycle monitoring and salinity adjustment, and a Relay Module of relays and contactors drives the pump motor, solenoids and compressor.
