Overview
A commercial wort chiller is a plate heat exchanger that rapidly cools hot wort from boiling (212°F) down to fermentation-ready temperature (60–68°F) using circulating coolant. The system consists of a wort-chiller-commercial-heat-exchanger-core made of brazed aluminum plates, a Coolant Circulation with pump and expansion tank, an optional Water Supply Circuit for additional cooling, and a Temperature Control that monitors and regulates outlet temperature. This method is far faster than passive coil or immersion chilling and produces cleaner wort than ice baths.
How it works
Hot wort flows from the kettle through the Wort Inlet into the Plate Stack. Inside, the wort travels through alternating channels in a counter-current path against the coolant. The large corrugated surface area of the Plate Stack enables extremely rapid heat transfer: as the wort passes through, it sheds its thermal energy to the coolant on the opposite side of each plate, exiting through the Wort Outlet at the target temperature in under 20 minutes.
The coolant itself is kept cold by the Coolant Circulation. The Coolant Pump circulates a mixture of propylene glycol and water (or chilled water from a separate reservoir) from the Coolant Expansion Tank through the heat exchanger at a rate of 5–15 GPM. A Solenoid Valve modulates flow to maintain the target wort outlet temperature. The Outlet Sensor in the wort outlet line continuously feeds the PID Controller, which adjusts the solenoid opening to keep the outlet at setpoint.
In many installations, a Water Supply Circuit provides supplementary cooling. Groundwater or municipal water enters through the Water Supply Valve and is throttled by the Water Pressure Regulator to 5–10 psi. The water passes through the hot side of a secondary heat exchanger or cooling jacket on the coolant return line, pre-cooling the glycol mixture before it re-enters the Coolant Expansion Tank. This dual-loop design reduces the cooling load and extends the life of the primary coolant.
The Coolant Expansion Tank serves three critical functions: it provides a reservoir of circulating fluid, it acts as a thermal buffer (the large mass slows thermal cycling), and it gives coolant space to expand and contract with temperature changes. An Air Vent prevents vapor lock, and a Pressure Relief Valve protects against overpressure.
