Chocolate Enrobing Line

A chocolate enrobing line coats biscuit, wafer, caramel, ganache, and other centres in a continuous shell of tempered chocolate, then sets that shell to a glossy, stable finish. Centres arrive in rows, ride an open wire belt through a falling curtain of chocolate that coats the top while a roller wets the bottom, pass under an air knife that blows off the excess to set the coating weight, and travel through a refrigerated tunnel where the shell crystallises hard. The result is a uniformly coated piece with a clean snap and a shine that holds up in storage.
Two things make or break the result: the chocolate must be correctly tempered, and the coating must be applied and set without disturbing that temper. The Tempering Unit handles the first, the Enrober Head and Blower and Tailing Section handle the application, and the Cooling Tunnel handles the set. The Control Panel keeps all of it in step.
Infeed
Coating is only even if the centres arrive evenly. The Infeed Section section carries centres on the Infeed Belt, squares them into rows on the Aligning Belt, and sets even gaps with Spacer Fingers. Correct spacing matters because pieces too close together bridge with chocolate and tear apart, while pieces too far apart waste belt area and chocolate. Sensors confirm the row pattern before the centres transfer onto the wire belt.
Tempering
Tempering is the step that gives chocolate its snap, gloss, and shelf stability. Cocoa butter can crystallise into several forms, and only one, the form V crystal, gives a good finish; the others leave the chocolate dull, soft, or prone to fat bloom. The Tempering Unit is a continuous machine that pushes chocolate through a Tempering Column with a scraped Tempering Screw across several Temper Zone Jacket zones: it cools the chocolate to seed the stable crystals, then warms it slightly to melt off the unstable ones, leaving a controlled seed of form V. A Temper Meter reads the degree of temper, and a Tempering Pump delivers the tempered chocolate to the enrober at 29-32 C.
Enrobing
In the Enrober Head, centres first pass over a Bottoming Roller that wets their underside, so the bottom is coated as well as the top. They then travel through a falling curtain formed by the Curtain Pan, which a Curtain Pump keeps flooded from the jacketed Chocolate Tank. The curtain drenches the tops and sides. Excess chocolate falls through the open wire belt into the Overflow Tray and returns to the tank, where a Tank Agitator keeps it uniform. Because returned chocolate has cooled and lost some temper, it is recirculated back through the tempering unit rather than reused directly.
The wire belt
Enrobing depends on an open belt, so the Wire Belt Assembly is a stainless Wire Belt Mesh band rather than a solid belt. The open mesh lets the bottoming roller reach the underside of each centre and lets curtain excess drain through. The belt runs on Belt Roller rollers with a Belt Tensioner take-up, and Belt Scraper scrapers clean set chocolate off the return run so it does not build up.
Blowing off and tailing
Straight off the curtain, each piece carries far too much chocolate. The Blower and Tailing Section fixes the coating weight: a Air Knife fed by a Blower Fan blows a controlled sheet of warm air, warmed by the Air Heater so it does not chill the chocolate, across the pieces to strip the excess. A Belt Shaker vibrates the belt to smooth the surface and shed more excess. As each piece leaves the belt, a Licking Roller turning against the belt edge removes the thin chocolate tail that would otherwise hang from the bottom, leaving a clean base.
Decoration and cooling
An optional Decoration Detailer sits after the blower. Its oscillating Stringing Head and Stringing Nozzle nozzles, fed by the Detail Pump, lay decorative chocolate threads across the coated pieces. The pieces then enter the Cooling Tunnel, a long insulated enclosure built from Tunnel Panel sections with several Tunnel Cooling Coil coils and Tunnel Fan fans, chilled by the Refrigeration Unit. The tunnel is run in zones, gentle cooling first to avoid shocking the chocolate, then colder zones to set it fully. Cooling too fast or too cold causes condensation and bloom, so the zone temperatures and residence time are tuned to the product. Pieces leave the tunnel set hard and glossy, ready to pack.
Control, variants, and use
The Control Panel coordinates belt speed, temper, curtain flow, blower air, and tunnel temperature through a PLC Module and several Variable Frequency Drive inverters, set on an HMI Touchscreen. Lines come in widths from narrow craft machines to wide industrial lines, and the same platform handles dark, milk, white, and compound coatings by adjusting temper and tunnel settings. Enrobers are used by biscuit and bar makers, pralines and truffle producers, ice cream coaters, and snack makers. A line is sized from the product width and throughput, which set the belt width, the chocolate tank volume, and the tunnel length needed to set the shell at speed.
