Pneumatic Cheese Press
ProductOverview
A pneumatic cheese press applies a controlled vertical force to cheese curd held in hoops, driving out whey and consolidating the curd into a firm wheel or block. Unlike weight-loaded or screw presses, this design uses regulated compressed air acting through double-acting cylinders, so the operator sets a target pressure rather than stacking masses. The full press is a vertical assembly of six subsystems built around a stainless steel structure: the Press Frame, the Pneumatic Cylinders, the Pressure Regulation, the Hoop Platforms, the Sensor Array, and the Control Module.
Frame and guides
The Press Frame is a welded stainless steel structure that carries every other subsystem and reacts the full pressing load. Two precision-ground Vertical Columns, typically 20 to 40 mm in diameter, act as guide shafts that keep the pressing head square as it descends. The Upper Plate is a machined platen, 300 to 600 mm across, that bears directly on the top hoop, while the Lower Base is a heavy platform with adjustable legs and an integral drain tray for collected whey. Travel is smooth because the head rides on Bearing Blocks, linear ball-bearing pillow blocks running on the guide columns.
Pneumatic actuation
Force comes from the Pneumatic Cylinders. A single Main Cylinder of 100 to 200 mm bore and up to 1000 mm stroke delivers the primary press force, and smaller Assist Cylinders of 50 to 100 mm bore equalize load when several hoop stations are pressed at once. Sealing is handled by Rod Seals, PTFE piston and rod seals with elastomer backup rings that hold pressure without leaking into the food zone. The cylinders are anchored to the frame with stainless Mounting Brackets using clevis or foot mounts and tie rods.
Pressure regulation
Because curd is consolidated gently at first and firmly later, pressure must be both accurate and rampable. The Pressure Regulation block handles this. A pilot-operated Pressure Reducer holds the secondary line at any setpoint from 0.5 to 5 bar within about 0.1 bar. A Main Solenoid Valve, a 24 VDC four-way directional valve on an NG10 cavity, controls extend and retract, while a proportional Auxiliary Solenoid shapes a soft-start ramp so the curd is not shocked. Shuttle Logic lets cylinders run independently or in lockstep, and a Pressure Relief valve set between 5 and 10 bar protects the system from overpressure.
Hoop platforms
The Hoop Platforms hold the cheese being pressed. Platform Tiers are stainless brackets fixed at 150 to 300 mm intervals on the guide columns, each carrying a Hoop Supports ring sized 200 to 300 mm inside diameter to take stainless or polypropylene hoops. Below each station, sloped Drain Trays catch expelled whey and route it to a common drain. Adjustable Stops set the height of each hoop relative to the platen so that pressing force is correctly transferred down the stack.
Sensing and control
Closed-loop pressing depends on the Sensor Array. Two Pressure Transducers, 4–20 mA sensors on the main and assist lines, report applied pressure, while a Position Sensor, an LVDT or cable transducer, tracks platen travel over the full stroke as the curd compacts. An optional Load Cell reads total force in kilograms for recipes specified by weight rather than pressure.
The Control Module turns these signals into a repeatable cycle. The Control PLC provides analog inputs for the transducers and relay outputs for the valves, sequencing ramp, hold, and release phases. The operator selects recipes and watches status on the HMI Terminal, a 7 to 10 inch touchscreen. The Power Distribution unit supplies regulated 24 VDC at 10 A and drives the solenoids. Together these let the press hold a programmed pressure profile across a long pressing run without operator attention, giving consistent moisture and texture batch to batch.
